Arayes - Grilled pita sandwich - Middle Eastern stuffed pita bread - عرايس باللحمة

  • Arayes are grilled pita bread sandwiches stuffed with mix of lamb meat and vegetables.
    Grilled on Bbq or top grill and can be done also in oven.
    The traditional arayes made with lamb meat but you can use a mix of beef and lamb also.
    Serve arayes with fries, salads, hummus and garlic sauce (toum)

    Arayes recipe:
    will serve around 24-30 pieces (quarters) depends of the size of the pita bread.
    500 g minced lamb
    1 big onion
    1 big tomato
    1/2 bunch of parsley
    chilly (mild) to your taste
    1 teaspoon 7 spice
    1 teaspoon paprika
    salt&black pepper to your taste
    you can add 1-2 table spoons of pomegranate molasses (optional)

    1. Put onion, tomato and parsley, chilly into food processor and pulse it few times.
    2. Remove extra liquid ( to avoid soggy arayes)
    3. In a big bowl combine together lamb minced meat, blended vegetables, spices and mixed till well combined.
    4. Take a pita bread, open it as a pocket and stuff it with meat mixture.
    5. Brush it arayes each side with olive oil to have a crispy bread
    6. Grill it (few minutes) or bake it in oven on medium heat for 10 - 15 minutes or till the meat is done and arayes has golden color.

    You can make a few month supply and stick them in the freezer for a weekly snack

      Hi, actually this Pita bread from local bakery next to home, but usually I prefer for arayes to take any thick arabic bread.

      you can find such thick Pitas in big carrefours where they bake fresh breads, like MOE or Battuta mall
