I saw a video where they are working with chicken farmers here in the USA in one of the Carolina's or both? The chicken farmers are sick and tired of being exploited by "Big Chicken" and of course the grossness of the massive horrible raising of chickens to be eaten.

I literally never cook mushrooms. I always wanted to, but when I tried they looked and tasted terrible. Yesterday, I cooked oyster mushrooms for the first time, following one of your recipes, and they tasted incredible. This is a new beginning for me, so thank you!!!

Derek, you are just so wonderful! My son and I are setting up a small, local, commercial mushroom operation on our farm in Hawaii. This video was both inspiring and helpful. We have a real problem with food sustainability in Hawaii, though our visitors don't see that. At any given time, we have only 2 weeks of food on the island (Hawaii,) and storm systems or shipping worker strikes could leave a lot of people desperate. We are creating some projects around that, and I hope the mushroom farm can contribute to that!

This is so wonderful - revolutionary actually. Food should be grown, not raised. Helping farmers transition means livelihoods are protected, animal lives are saved and people still get to eat delicious food 💚 😊 🙌
I've been growing them at home since lockdown and it's so magical. The water content of mushrooms while they're growing before being dried is about 85-95%. Because water responds to frequency you can literally talk to them, pray over them and imbue them with love and healing properties. It's become one of my favorite hobbies. I don't eat meat either and there are so many wonderful vegan chefs preparing mushrooms in ways that would amaze most meat eaters. You just have to experiment.

I grew up in a steak-loving family where we always cooked button mushrooms to serve over steak. Before I went vegan, I had grown to enjoy eating the mushrooms MORE than the steak. I had put all this effort into perfecting my rib eye by salting it in advance and cooking it sous vide. But the portabellas I grilled along with it were far more delicious. With near-zero prep time and effort, too! It's so much work and time to make the perfect steak, but so quick and easy to make a MORE delicious portabella. Your video where you grill mushrooms and veggies was a game changer. You show that vegans don't have to miss out on ANYTHING - including grilling. I'm not a burger person, so Beyond burgers are not going to cut it for me. Mushrooms are it! Long live the mushrooms!

@cidergirl67 Ditto on the searching for growers, but here, by me (southern USA), the mushroom growers are quite far away and rather small operations. The most promising one shows up online as "sold out" of stock and says to check back in a few days. I LOVE this video and hope the repurpose trend spreads fast globally!
The good thing is that mushrooms don't get bored, feel cramped, breathe their urine and their poop and don't peck one other till bleeding. They actually get plenty of air and they are really harvested, not killed.
By far the best video I’ve watched on TH-cam, and it is also inspiring me to do something similar that will help me to finance my dream of a sanctuary, where I can rescue as many animals as possible. Thanks Derek, and as always, thanks for the shots of Mrs America in the video
This is amazing Derek! We need more mushroom growers in the US as the few we have are seemingly always out of stock. Mushroom farming is probably the most sustainable crop known to man! Just think most of the mushroom lives in the growth medium (which is stuff we normally throw away) as mycelium so the fruiting body they produce is like nature's gift to man. You cannot harm a mushroom as this is just like a fruit from them hence the name fruiting body. The protein composition is very similar to animal protein even though it has a lot more water. Speaking of water it requires way less water than regular vegetation crops. It's nature's perfect food!

I've been waiting for this video, and it is wonderful. You've inspired me to start cooking more with regular and exotic mushrooms. I just made my first Lion's Mane steak this week and boy oh boy was it good. Thanks for the recipes, techniques, and your compassion. I started out making your nutritional yeast seasonings (I love that video!), and could not believe how GOOD they make tofu taste. In fact, I just ate one of the breakfast sandwiches with tofu & mushroom "sausages". I've only stopped eating meat & dairy at the beginning of August 2024, so I'm still a noob, but I'm not missing a thing. My A1C thanks you Derek & Chad. I'll be ordering those books of yours soon. This is amazing! It’s projects like this that make me realize how far behind the US is compared to other countries. Elmhurst converted from a dairy farm to a plant milk company in 2017 and never looked back. More companies should be getting on board with that program. Thanks for sharing this! Mepkin Abbey, a Trappist Monastery in South Carolina, made the same transition almost 18 years ago. Went from chickens to Golden oyster and other mushrooms. The Abbey is realizing a greater income from the mushroom business. They provide to the Charleston restaurant community and, when harvest is plentiful, they also sell through the local Whole Foods.
Thanks for creating such an inspiring film. There must be loads of older buildings out there which are ripe for conversion. Now to move the conversation beyond the field mushroom options lots of pubs offer and move onto mushroom steaks, and all the other fantastic ingredients you showcase…
Dear Derek, there are _so_ many neglected/empty former grocery stores/properties in the USA and other countries awaiting...practically begging...to be "new farms" for plants. Keep pushing for reuse and sustainable farming initiatives. 🌱💪

Rural Spain here - I have just bought 2 kits and a set of dowels from a supplier in Finland (sorry UK - BREXIT has made importing so expensive/impossible in the case of many companies) so that I can grow my own, and, hopefully, replicate techniques on my own channel. Quick tip for mushrooms broadly, cook in a preheated well oiled pan on high heat. Add, cook hot and fast until brown. Deglaze and you're done.

The good thing is that mushrooms don't get bored, feel cramped, breathe their urine and their poop and don't peck one other till bleeding. They actually get plenty of air and they are really harvested, not killed.

This is amazing Derek! We need more mushroom growers in the US as the few we have are seemingly always out of stock. Mushroom farming is probably the most sustainable crop known to man! Just think most of the mushroom lives in the growth medium (which is stuff we normally throw away) as mycelium so the fruiting body they produce is like nature's gift to man. You cannot harm a mushroom as this is just like a fruit from them hence the name fruiting body. The protein composition is very similar to animal protein even though it has a lot more water. Speaking of water it requires way less water than regular vegetation crops. It's nature's perfect food!

I've been waiting for this video, and it is wonderful. You've inspired me to start cooking more with regular and exotic mushrooms. I just made my first Lion's Mane steak this week and boy oh boy was it good. Thanks for the recipes, techniques, and your compassion. I started out making your nutritional yeast seasonings (I love that video!), and could not believe how GOOD they make tofu taste. In fact, I just ate one of the breakfast sandwiches with tofu & mushroom "sausages". I've only stopped eating meat & dairy at the beginning of August 2024, so I'm still a noob, but I'm not missing a thing. My A1C thanks you Derek & Chad. I'll be ordering those books of yours soon. This is amazing! It’s projects like this that make me realize how far behind the US is compared to other countries. Elmhurst converted from a dairy farm to a plant milk company in 2017 and never looked back. More companies should be getting on board with that program. Thanks for sharing this! I’m sure we are all equally excited to see what comes next!

Mepkin Abbey, a Trappist Monastery in South Carolina, made the same transition almost 18 years ago. Went from chickens to Golden oyster and other mushrooms. The Abbey is realizing a greater income from the mushroom business. They provide to the Charleston restaurant community and, when harvest is plentiful, they also sell through the local Whole Foods.
Did a retreat there many years ago...beautiful place❤

I'm glad you stated "Its not right for ME" rather than everyone else. I always liked how your approach to veganism doesn't make this habit of turning away those who eat meat but are curious about the alternatives by not shaming that part of the audience.

Rural Spain here - I have just bought 2 kits and a set of dowels from a supplier in Finland (sorry UK - BREXIT has made importing so expensive/impossible in the case of many companies) so that I can grow my own, and, hopefully, replicate techniques on my own channel.
