It has to be 6. All the equations other than "subtract it by the previous number." is just to get the number 6.
Look, when you add 5 to your number, let's say it's x, it would be x+5. next, x+5-1 which is x+4. Next, add 2, which would make it x+6. Now subtract x, which is the same as removing the letter x from the equation, which is -x+- 6, which makes you ALWAYs get the number 6.

The key to these are the 'now subtract by your original number' because if you think about it, that number you choose is irrelevant if It's going to be subtracted anyway.
6 comes from the other numbers:
5-1+2=6
It doesnt matter how big your number was, that would've ended up meaning 0 because of the 'subtract by your original number' thing
