Gordon trains them like he's been trained. Gordon went though the same shouting and humiliation and came out of it with thicker skin than when he came in to it. That's the reason why he does what he does. He learned it from the best

Onion and garlic does go into making an Italian sauce. Unless you are from the South of Italy. Depends on the region. Take it from an Italian brought up on old traditional recipes. The northern Italians do add garlic and onion anyway. And the best foods you will find is in Piacenza, Bologna and Parma.
I have a lot of relatives in Bari, garlic is used often there. In Italy recipies can vary even from one town to the next, or even from one neighborhood to the next! 😅

And it is one of my favourites. My relatives ftom up North, they use every herb, every tomato type, porcini or mincemeat, carrot, cellery.....😂. My fave sauce is the one where they use onion, garlic, dry porcini mushroom, 1 carrot, celery, rosemary, basil, thyme and sage, and quite a bit of tomato puree'. No passata whatsoever. Half a porcini stock cube (optional), salt, pepper and sugar......Wow! U taste the mushroom coming through, more esp if you soak the mushroom first and use that water too . That sauce with spinach and ricotta tortelli. Oh my god! 😰.....amazing. And also adding Borlotti beans! Truly amazing taste.

You do know most chefs are pretty out there right, chefs need to be energetic because its about being alert and aware of the details and nuance of your cooking. Gino's actually pretty calm,. relative to other chefs like Marco Pierre or even Gordon Ramsay.
