      My grandma to my friend I brought round for dinner 'are you ok love, you've only eaten barely anything'. He ate five servings of food. That weekend was the only time I have seen him wearing trousers that weren't skinny jeans, and he wore skinny jeans for our clothed swimming test.

      I'm from Central Europe and tamales is a completely foreign concept to me, so measurements come in handy for someone like me. We eyeball the ingredients when making kolach or bramborak, yet if you would need measurements if you wanted to try it without having to travel across half the world. Just get off your high horse.

    As a Hispanic man, yes making tamales is a all day process that the children are forced to assist with that begins at about 5am so we can be done for dinner. We all hate it as a children but those days are great and I'm glad I learned how

      I'm a Navajo guy and when I learned how to make tamales, I was thankful cause they have saved my ass more times than I can count, either by selling them or by being my breakfast and lunch for weeks at a time

      I'm from South Texas (a few hours south of San Antonio). We do a huge tamalada every year for Christmas...and my family is white, lol.
      Best freaking meal of the year though. It's crazy, the tamale shops do some serious business around Christmas. You can even buy them by the dozen at some of the gas stations.

    My Abuelita passed away last year and it's been tough but these look almost exactly like hers but smaller and I tried making them the same way you did and they tasted so similar it shocked me. Thank you Andrew for letting me re -live her amazing cooking

      During Christmas my aunt made some tamales. We have a mixed cultures church. American and Mexican. My aunt wanted me to pass her tamales to everyone. The next week the guy I handed him some told me that they were delicious. He said that the husk were a little too chewy. I laughed so hard. I told him he wasn't supposed to eat the husk! He continued and told me that we should have included instructions on how to eat them.

    when I make tamales with my mom we literally use the same ingredients you're using, but in the region of Mexico that we're from (Zamora, Michoacan) our masa is not white: we add a little of the 'spice paste' into the masa and we knead the dough for like 45 minutes straight. I'm not sure what region of Mexico your tamales are from, but if you put that much lard, they're 100% legit; THIS is cultural appreciation so it's a double thumbs-up for me.

      Can confirm is a "norteño thing" my mom asks me to go to a nearby "molino" to buy that dough i think its called "Mixtamal" and is often used to make "gorditas" too.
      The most special thing about tamales is the array of things you can stuff on them, last month my girlfriend made a wellbunch of them to take to her relatives living in san antonio and she made some sweet tamales with chiplote and chabacano mermelade and they were absolutely tasteful the ones made from cajeta those were the winners tho.

    Protip I learned from my mama: add some of the chili paste you made into your masa to give it some flavor. And you could use different flavored mantecas or instead of water use broths. Cooking is amazing.

      LuckiestGravy another tip if you are making tamales de dulce!!! before you make your masa, boil a few cinnamon sticks in water with as much sugar as you want and use that water to make the masa (of course still add the lard)! it tastes better than if you add sugar directly into the masa

    People out here saying “this is wrong” and “you should’ve done this or that” chill. The beauty of Mexican food is that depending on the region, state, even town/city dishes are prepared differently. Tamales in Oaxaca are different from Jalisco, but they’re still tamales and are authentic.

      Tamales are different even within Mexico. North Mexico (smaller, greasier) tamales are way different from Center Mexico tamales (bigger, with crumbles), that are different from South Mexico tamales (tamales oaxaquelos: large as center's, thin and greasier as north's, but with more herbs and using banana leafs instead of corn husks)

    There is another version of tamales that my family makes occasionally.
    They are sweet tamales. We change the dough a bit. We add sugar, cinnamon, and raisins. (Maybe vanilla extract sometimes) We also add pink food coloring to tell apart the sweet tamales from the spicy or savory ones.
    Or maybe instead of pork, we like to have cheese and jalapeños.

      But really any cheese could work. It’s based on preference.

    I didn't know you could use corn husks. The ones I've eaten has always had banana leaves, though my family on dad's side are from El Salvador and not mexico so it be a regional thing

      I'm not Hispanic and I used to always eat tamale during the holidays. My grandma would make batch after batch to give to family and she would always give me at least 50 of them. They'd be gone within 2-3 days too they were great. She was Hispanic.

      My mama ain't Mexican at all. We're native American and Irish. But we make tamales from scratch too. And we learned that the first time we made it. Its honestly the more meat the better. I love the masa but the meat is amazing.

    I have made tamales several times growing up. And I’ve never heard of whipping the lard. Usually we heat it up and melt it and mix it in like it was a liquid. Also for those trying it. Another tip to know it’s done right is if the tamale rolls clean off the leaf. That means there is enough lard. It was still great!

      Yeah it just kinda depends on different regions in Mexico and how they make tamales, my mom's side of the family adds the chile to the masa which makes it more spicy. His recipe still looks tasty tho!

    why did this video make me start crying.... my grandma would make her special tamales recipe every year and we never truly learned it from her before she passed away. now with no recipe, my mom pours herself into making one batch after another trying to get it perfect every christmas...
