I moved from NY where my friend used to make escivitch fish for me. I'm in Georgia now and had so many disappointments where the person just didn't do it real Jamaica style. I'm proud to say happily this video showed me just how to do it and boy was it great.

I love that I have learned to make a new savory dish on my own instead of only ha I ving the one option of ordering it at a restaurant. I agree with other comments on you site, your step-by-step simple and easy to follow approach makes what is complexing seem attainable. Thank you kindly and do keep up the great work that you do in the kitchen where you share your gifts with the world to savor, cherish, and enjoy!!!
This is a good dish. It’s origin is from Spain as escabeche and is found in Spain, Portugal and all over Latin America and the Caribbean. I grew up on the Spanish version known as escabeche. This Jamaican version is also delicious.
A colander can be used to drain the juices and then dab with kitchen towels. I also use a bit of turmeric, chilli, salt and black pepper to season the fish before frying. Much better flavour. But thanks.
Your food looks amazing,however,I've made a slight observation that all purpose seasoning and all the other seasonings people use on their food,are never included. I've never known people from the west Indies to not use the main seasoning for their meat or fish
