    I appreciate the great help that your escivitch part 1 & 2 videos provided me. I watched them each about 3-4 times over one week before I made my dish. My dish was delicious!! I love that I have learned to make a new savory dish on my own instead of only having the one option of ordering it at a restaurant. I agree with other comments on you site, your step-by-step simple and easy to follow approach makes what is complexing seem attainable.     love you Fay, nobody making escovitch in Putnam County Ny. Probably none in Westchester either. Bronx they use now everyone is close for buisiness. Can't order a pan so you know what you try to follow your way on youtube and thats it. thanks again.

      Other islands that don’t use vinegar stew the fish after it’s fried with tomatoes and other spices. I agree. No ketchup with this dish

    I thought that Scotch Bonnet pepper was fire hot until I tried a ghost pepper!!! Yikes for real!!! Ha! Ha!

    Yummi, thank you so much again. I remember driving through Bamboo avenue, and as soon as you stop the car women come up to the window offering Escovitch Fish and Bammy. I normally don't buy fish on the street to eat so I didn't do it this time either, but the sight and the smell, was so fabulous I kept wonder..is it possible to eat the fish 3 or 4 days after preparing?

    I love this type Jamaican Escovitch Fish. Thanks to you I know how the preparations is done, but how do you get rid of the fried fish smell throughout the house. It lasts for days, my friends have told me to use candles open windows and boil vinegar. Due to all this I don't cook fish in the house. Help

      +RAY WAN your friends have good advice. It is the one thing about frying fish. The smell will linger but it tastes so good I don't mind.

    When I lived on St. Croix I thought the bush in my backyard was so beautiful.....until I picked a pepper and cut it up, rubbed my eyes and nose. It felt like every part of my body burn! My next door neighbor was rubbing me down with alcohol....Did not work! The only thing that worked for the burn to go away was time. Horrible experience. So glad I can laugh about it now. :-)

    When making the Escovitch Sauce it does matter when you put in the scotch bonnet , you need to put in first thing to infuse the vinegar

    I love this fish, why do J'cans act like the scotch Bonnet pepper is so hot , I eat it raw with the seeds and everything , it has a little chill but noting to talk about. When you talk about pepper,talk about moruga scorpion pepper or bird pepper now that is what I call real pepper. YES!

      I can't help but laugh at us real spice heads. Nothing bad I swear but I can eat a Scotch Bonnet pepper like it's nothing but the scorpion pepper? I look at it and I hurt all over.

      Loyalty 77 non stick pan is best to use when drying anything. I've learned my lesson a few times
