Cake flour 300g
Baking powder 3g
Sugar powder 90g
Milk powder 12g
Salt 1.5g
Butter 180g
Egg 75g
Pineapple 1100g
Baking soda 1/8 tsp
Sugar 200g
Maltose 80g

I had these in Taiwan a few years ago and miss those badly. Your recipe looks nice, I am gonna try it. Is the egg essential for it? Can I avoid egg or any vegetarian substitute for it?
Hum, interesting question! I have never had a vegan pineapple cake before, the texture and flavor of the dough relay on the eggs a lot, if you take it out of the ingredients you might lost that eggy aroma, i did found some vegan recipe online but it’s a completely different recipe.
I’m pretty sure the one you get in Taiwan is made with eggs too, Lo lots of pineapple cake packaging says vegetarian, that’s not including milk and egg, so if you like the same flavor you might need to put egg inside
