    Can you skip the yeast? And change the grapeseed oil for olive oil or butter? How long do you cook it for? Can you pan fry it instead or it's best done in the oven?

      Yes, you can skip the yeast. In fact, you can make the bread without any leavening agents. Olive oil or butter may be substituted for grapeseed oil. I recently made the Einkorn flatbread with olive oil in place of grapeseed oil and was very happy with the flavor, aroma, and texture of the bread (see my Einkorn baguette recipe, which also uses olive oil). You might have to experiment with the flour-to-liquid ratio for cooking the flatbread in a pan. Einkorn dough tends to be sticky and difficult to handle. Increasing the flour content will make the dough less sticky; however, since the gluten structure of Einkorn is different, the baked bread might be more crumbly. Oven baking might be easier if your dough is sticky. For pan baking, I recommend using a cast-iron skillet. Cast-iron skillets do a much better job with heat distribution and retention. The olive oil that comes into contact with your hot skillet might smoke if your skillet temperature is above the smoke point of your olive oil. The smoke point for extra virgin olive oil is about 375 °F (191 °C). What dictates the cooking times for either oven baking or skillet baking are the cooking medium’s temperature (oven or skillet), the dough thickness, and its liquid content. I’d be happy to do some experiments over the next few weeks, time permitting, and share my findings.

      I finally got a chance to work on this.
      Here’s my simplest recipe for Unleavened flatbread with Einkorn flour:
      Ingredients
      --------------------------------------------------
      240 g All-purpose Einkorn Flour
      178 g Water, room temperature
      1 tsp Salt
      1 tbsp Olive Oil
      * Note: The olive oil is optional. If you choose not to use it, add 1 additional tablespoon of water to the recipe,
      Instructions:
      --------------------------------------------------
      - Sift flour into a large bowl.
      - Scatter salt over the top.
      - Add oil and water and mix ingredients with a spatula, until dough is sticky.
      - Flour your worksurface generously and transfer the dough from the bowl to your worksurface.
      - Sprinkle some flour over the dough and knead the dough for 3 minutes, sprinkling flour on the dough as needed.
      - Divide the dough into 4 pieces and roll the pieces into balls.
      - Flatten the balls with your hand or a roller.
      - Place a non-stick pan or cast-iron skillet on your stove and set the heat to medium. Heat the pan until the surface is sufficiently hot. To see if it’s sufficiently hot, throw a couple of drops of water on the pan; if they fizzle away, the pan is ready. There's no need to oil the surface if the pan is non-stick.
      - Transfer the flattened dough to the hot pan and cook the bread for 5 to 6 minutes, rotating the bread every 1 to 1.5 minutes until the bread is cooked. You may cover the pan or leave it uncovered while the bread is cooking.

    Beautiful bread. Is bread in Iran normally made of einkorn?

      Thank you so much for your comment and question! Einkorn wheat (Triticum Monococcum) is only marginally cultivated in North West Iran (Azerbaijan region). So, bread in traditional farming communities that use Einkorn is more than likely made from that type of wheat. In Iran, several types of wheat are grown, with two primary varieties being widely cultivated: hard red wheat and soft wheat. Iran also grows winter wheat, which is planted in the fall and harvested in the spring, and spring wheat, which is planted in early spring and harvested in late summer or fall, depending on the region. Unlike Einkorn, these varieties are hybridized or selectively bred for improved yield, disease resistance, and adaptability to different climates.

    sorry what was the baking temperature? I can't seem to find it

      The baking temperature is 375°F (~190°C), and it could take anywhere from 25 to 35 minutes depending on your over type and its temperature regulation mechanism (that's if you place both pans in the oven at the same time). If you're baking them one pan at a time, 18 to 20 minutes at the 375°F should be enough. Please see subtitles at 07:33 for baking temperature. Thank you.
