Homemade Double Cream Plain Yogurt Recipe

  • Greetings and welcome back to my kitchen . in this video I'm sharing with you how to make double cream plain yogurt at home.
    Yogurt is a dairy product made by fermenting milk with a yogurt culture.Cow's milk is the milk most commonly used to make yogurt. If possible go for raw fresh milk gotten directly from the cow but where that's not possible just buy homogenized or pasteurized fresh milk from the shop. Each type of milk produces substantially different results.
    plant milks like coconut & almond etc can also be used to produce yogurt .
    It provides protein and calcium, and it may enhance healthy gut bacteria.
    Health benefits range from protecting against osteoporosis to relieving irritable bowel disease and aiding digestion, but these depend on the type of yogurt consumed.
    Added sugar and processing can make some yogurt products unhealthy.
    ingredients:
    milk & culture only
    METHOD
    Pour 8 cups milk into a heavy-based saucepan (cast-iron works best) and place over medium to medium-high heat. Warm the milk to just below boiling, about 93°C. Use a candy thermometer to measure the temperature. Stir the milk gently as it heats to make sure the bottom doesn’t catch and the milk doesn’t boil over. This step is necessary to change the protein structure in the milk so it sets as a solid instead of separating.
    Let the milk cool until it is just warm to the touch, about 44°C. Stir occasionally to prevent a skin from forming.
    Place about 1 cup warm milk into a bowl. Add the yoghurt culture and whisk until smooth
    and dissolved in the milk.
    Whisking gently, pour the thinned yoghurt into the warm milk. This inoculates the milk with the yoghurt culture.
    Cover the saucepan and place in the oven with the oven light on or wrap the pot in towels to keep the milk warm as it sets (ideally around 44°C). You can also make the yoghurt in a dehydrator or using a yoghurt maker.
    Let the yoghurt set for at least 8 hours or overnight - the exact time will depend on the cultures used, the temperature of the yoghurt, and your preference. The longer yoghurt sits, the thicker and more tart it becomes. Avoid stirring the yoghurt until it has fully set.
    Once the yoghurt has set to your liking, remove it from the oven. If you see any watery whey on the surface of the yoghurt, you can drain it off or whisk it back into the yoghurt before transferring to containers. Whisking also gives the yoghurt a more consistent creamy texture.
    Transfer into storage containers, uncover and refrigerate. Home-made yoghurt will keep for about 2 weeks in the fridge

    That is really incredible. I recently read a recipe that asked for homemade yogurt and I was like how is that even possible? But clearly it is! I love the texture of this yogurt. It’s thick and sturdy like Greek Yogurt which is my favorite kind.

    @6:05 almonds don't have milk. They don’t breastfeed almond babies. As a matter of fact almonds don’t have breasts. It is shocking, ey?

    I honestly don’t think you can buy a sugar free yogurt in stores so this is perfect! I need to try this because I eat yogurt a lot! I love mine with fresh fruit

    I didn't like the aspect of dipping my finger to taste temperature, there is thermometer to taste or check for temperature. Honestly I love this,I will give it a try, but can I add lemon to make it a little sour?
