This is the recipe I followed! The only changes I make is not using any nuts or raisins, and I increase the cinnamon to 2 1/2 t. Enjoy!

Hi Laura, I’m from Michigan and we tried to see you on Mackinaw Island but you had plane issues, meeting you and Jack was our hope. Lucky for us we had spotted Jack Barnwell down by a fountain-it was so funny, we didn’t want to intrude on his conversation at the time and thought we’d missed our chance to talk to him.....about an hour later I was taking a pic of my friend Shelly and he photo bombed her! Our husbands laughed at us all day because we kept running into Jack and he was so sweet to us every time- it made our weekend. Long story short....me, Shelly, Cindy, and Lynette are coming to see you this weekend in Cleveland! Hopefully hahaha, Ginger.

I just adore watching you and your mother together... I’m only 32, but I lost my mom and dad when I was 27, and I had a little 2 year old son at the time. This brings tears and smiles to my face every time I see you all together, because it brings back the most amazing memories for me. You’re mother is so sweet and funny just like my mom was. Hi Laura, We love carrot cake and I usually make it to take when we go to relatives at Easter. Being from Texas, pecans go both into the cake and frosting but no raisins or pineapple which I've also seen in recipes! I also now use 1/2 oil and 1/2 applesauce and we can never tell the difference. Parchment paper is a big help and I always double the frosting...hides multiple little mistakes. That all said, your cake looks delicious and loved seeing your mom, Benjamin and Russell. Cold and snowy here so I think I'm going to make your Tortilla Soup again...so good! Take care.

Your comment "that right there, is satisfying", when you showed the egg collection and carrots is so true. There's definitely satisfaction in harvesting items we can grow/raise! These ingredients make everything taste so much better than store bought! You're so lucky you can garden at this time of year. I live in Manitoba, where our winters of minus 30 degrees celsius, which according to google is minus 22 Fahrenheit. Our ground freezes, so I don't think leaving root crops in would work for us. I agree with C Olsen. I used to have trouble with cakes sticking to pans and parchment paper has been a life saver. Try it, you won't be sorry. I remember making a carrot cake from scratch with my son who was 6 years old at the time, now he is 43 but he loved being in the kitchen with me. They are great memories.

I love this! I got my nana a carrot cake for her birthday a week ago. It had been so long since we had carrot cake. She loved it. Store bakery still so yummy! I loved everything about this video. You harvesting carrots, Russell rubbing against your camera for attention, it was like he was giving us a hug, the chicken Pail you used to collect your eggs, and then you putting everything together! ❤️

I love your comments while harvesting the carrots, literally sounds like me everytime! " this ones good, this ones weird, wow this one is going to be big" I feel like its always exciting not knowing what your going to get, unlike most of things we grow. Can't wait to try this method, I'm in zone 6 and it swings in both directions, we too have had an abnormally mild winter. Love your videos.
Was inspired to make this with my MIL today! We had carrots from our garden too. Reduced the sugar 75% in the cake and used our own cream cheese icing recipe. It was delicious! Thanks for the great idea 😊😊

Looks delicious! I’m a cake baker, and parchment circles are my best friends when I’m baking layers. I cut my own from the roll - quick, easy, and cheap! The consistency of your frosting looked like spreading perfection. 😋

To avoid your cakes from sticking to the bottom of the pan, line with butter & parchment paper. Works like a charm!

Oh Russell is so crazy, and that's a kitty for you, they can be little stinkers and that's just the way they roll, lol! And your carrot cake is so pretty, when you make homemade sometimes they turn out not so perfect, but that's the neat thing about real life and to me it looked just fine and so yummy, and I am so jealous that your weather is so amazing, all I see when I look around is giant mountains of snow in my yard from shoveling the walks. I am so ready for warmer weather it is cold and yucky in Idaho. If she did only vegetable garden videos, I'd unsubscribe. I'm here for the herbaceous annuals and perennials. I find vegetable garden videos boring. "Ooh, look: corn." "Oh, here's another tomato." Sure, they're productive but they're not pretty. Nowhere nearly as pretty as the flower beds and shrubs and plants she has. To each their own, I suppose.

Add 1/2 - 1 tsp ground ginger to the carrot cake. It makes a world of difference. And raisins. Cake looks yummy! Imperfect is perfect.

Yummmm!!! We just talked today at lunch time about finding a good carrot cake! You do so much organically, please consider switching to olive or avocado oil and eliminate the use of chemically processed canola oil. And also someone else’s comment on using half oil half applesauce is a great idea, particularly in a carrot cake...you will not taste the difference. Thanks for your inspiration in all you do, see you in Cleveland!

Is it me - thought the carrot cake looked GREAT before the flowers and SUPERBLY AMAZING after the flowers. It looked rustic yummy and would cost at least $45 at a fancy bakery here in Chicago. Wildly excited that produce from the garden is still available for cooking. Great work, Laura and GA Mom.
