In Martinique and Guadeloupe, its our traditionnal Christmas meal, with yam and stewed pork. But we don't use coconut milk. We name it "Pois d'Angole" (Angola's peas)
You don’t need to add roucou to your pigeon peas. It’s optional. I make mine without it and it still tastes great! I would say the coconut milk is the important ingredient
