    Ingredients for Leek Pkhali
    Serves 4 to 5
    2 pounds/900g leeks
    ½ teaspoon coarse salt
    1 ½/165g cups walnuts, pieces and halves
    3 or 4 garlic cloves, peeled and chopped
    1 teaspoon each: ground marigold, blue fenugreek, and coriander
    ½ teaspoon hot red ground pepper or cayenne, or more
    1 cup/40g chopped cilantro
    2 to 3 tablespoons white wine vinegar
    pomegranate seeds for garnishing

    Found your channel because my folks have a small walnut orchard that wasn't commercially viable last year and probably won't be this year either due to low commercial walnut prices, so I was searching for something to do with all the extra walnuts we have. We've never really used them other than as nuts for pastries, so it's great to find a cuisine that uses them almost as a staple.
    But being in the middle of Great Lent I'm also really enjoying these Lenten recipes in general, it's easy to get in a food rut in Lent and your channel has given me a bunch of new ideas. Thank you for posting these videos and I hope you get more subscribers, you really deserve them!

      That’s so interesting! Growing walnuts! There are walnut trees growing across Georgia, but I did not see many of them in USA. I live in NYC and walnuts here are pretty expensive. Where are you? Glad you found the channel, and thank you for your kind words. Many Georgian vegetable and bean dishes are indeed great for Lent.

      ​@@GeorgianCuisineatTamadasTable We're out in California where it's a more common crop, at least down in the valley where my parents live, but they're still expensive in the stores, even out here; though you can get better prices if you seek out local growers during harvest season. But at wholesale prices you're lucky to get a dollar a pound, maybe only 50 cents if you drop them off at a weigh station, and it's just not cost effective to get someone to come out to harvest a small orchard at those prices, they only want to work with the large orchards that are at least dozens if not hundreds of acres in size. So we collect what we can by hand, they sell some on craigslist, but we're still left with more than we really know what to do with since they're not a significant part of our culinary tradition. So I've been loving these recipes and learning how to cook proper dishes with them, most of which are absolutely amazing.

      Yes it will be good, even better if you add ground coriander which is available everywhere. Marigold is available online.
