I’ve found using Mexican oregano really adds to my homemade Mexican food game! It’s different from regular Italian oregano. I watch Views on the road, and she only uses Mexican oregano. Love having pickled onions on any and all food!!!
Thanks Scott, I really love pickled red onions but haven't tried adding the lime juice, so next batch I sure will. I actually love pickled red onions over any rice dish and with eggs of any style... so delicious!
Note to self (this is my 2nd time making this-so good) Fill and tamp down into a sealable jar: red onions sliced thinly root to sprout - layered with - 1-3 jalapeños, sliced thinly, include seed Tamp down into jar. Add black peppercorns cumin powder oregano leaves garlic cloves, smashed Brine: In a saucepan heat bring to boil: 1cup combo: acv, lime juice, red wine vinegar or… 1 T salt 1-1/2 t sugar 1cup water Get air bubbles out as you pour. Cool to room temp. 24 hours+ in fridge.
Really enjoy your recipe videos. I made sauerkraut for the first time using my homegrown cabbage and your recipe. Best sauerkraut I've ever had. Can't wait to try making these pickled red onions.
Never heard of 1/2 lime 1/2 orange juices to pickle which sounds delightful for summer. Thank You for great tips and your time & efforts Sir. Love 2 Cook 👩🍳
I have made your recipe and today I'm making this recipe again! I ❤ love it! The pickled onions last longer than you think! I made a Big batch and they lasted for 6 weeks - until I ate them All- 👍 great with All my food! Mexican, Indian, Italian and sandwiches or eggs! Thank you Scott for this recipe 🙏
I made one batch of pickled red peppers last week to go with some steak quesadillas I recently made, but it was just very basic. Gonna be trying it this way next time, once my jalapenos are bigger for harvesting.
Love your cooking videos. Love my pickle packer and use it for everything. I live in AZ so I get what you are saying about Mexican food. My son and granddaughter like it spicy. Funny story to share my son went to MI for a family reunion and went to lunch with some cousins, and my AZ brother. He ordered a burrito enchilada style and the waitress looked at him puzzled and asked if he wanted it wet. 🤣🤣🤣 TFS 💯👍
Now I'm sitting here completely stuffed to the gills from being a glut at the local Asian buffet today, having absolutely no room at all and still my taste buds are yearning for those onions that I have never tasted before. It's embarrassing actually. I do so love pickled vegetables n fruits! I think I need to try some soon. 🤤 😎
Loved the recipe, will try it next time. My pickled onions tend to have a Caribbean twist as I use Thyme and scotch bonnet peppers or habanero's. I love it on Fried Fish Caribbean style . sort of an easy pickle . I have onions growing , and some should be red , along with Jalapenos as well as my Scotch Bonnet . Plus being from the islands I love having lots of thyme. . Ninette Bird- The Caribbean Wife- Central Tx.
I also made pickled onions this morning. Was my first time making them so I hope they come out good. I also made some pickled peppers the same way, only I heated the brine to a boil and simmered it for 10 minutes before pouring into the jar of peppers. Your Mexican version of onions looks so good. Will try it your way next time. Thanks for the video. Looking forward to your next video.
Oooooo, I’m definitely going to try this with a coolapeño. As the husband and I age the jalapeños no longer agree with us. Thank you for the video Scott!
Hey Scott Enjoyed your video. I'm originally from Houston but live in Montana now and love using pickled onions with all kinds of meals. They're good with anything. Just wanted to suggest that you try adding one more ingredient to your recipe that REALLY makes them awesome. Try adding a little liquid smoke (I prefer hickory) to your recipe. I think you'll like it. It makes them truly unique and so much better. If you get a chance, try it and let me know what you think. Take care, from Steve here in Bozeman Montana.
Great idea, Scott. I use hot peppers in most of my pickles and I like to make pickled onions, but I've never added peppers to my onions. I'll definitely try this. Wonderful video!
Lol! As I was watching this video- that was my exact thought. Also picking up your food with a hand and edge of knife will get you in trouble with the TH-cam knife police too!
Seeds themselves don't provide any capsaicin. But, since they have a good amount of surface area and the pepper's oils from the flesh and pith coat the seeds.
Glad you speak English. You had me worried for a few seconds there. Ever tried making them with fresh lime juice instead of vinegar? According to a famous chef, that's what they use in parts of Mexico. I've never tried it myself but it would be a welcome flavor for tacos and other things.
My onions were really small in 8a, planted in January. Mine are much smaller than yours. The ones that are large enough to keep are drying in my garage. I have frozen and dehydrated the green tops and I’m not sure if I’ll do this again. Bunching onions might be the way for me 😊
You reminded me of this verse: 2 Corinthians 6:14-18 King James Version 14 Be ye not unequally yoked together with unbelievers: for what fellowship hath righteousness with unrighteousness? and what communion hath light with darkness? 15 And what concord hath Christ with Belial? or what part hath he that believeth with an infidel? 16 And what agreement hath the temple of God with idols? for ye are the temple of the living God; as God hath said, I will dwell in them, and walk in them; and I will be their God, and they shall be my people. 17 Wherefore come out from among them, and be ye separate, saith the Lord, and touch not the unclean thing; and I will receive you. 18 And will be a Father unto you, and ye shall be my sons and daughters, saith the Lord Almighty. Thank you, for this video and may you be blessed as you continue in the word of God.
Hearing your intro in Spanish was a delight!

Looking forward to trying these pickled onions. I love onions in any shape, form or fashion! 😊

Thanks Scott, I did some onions last year with infused vinegars, a mango-infused vinegar with brown sugar made a delightful pickled onion relish.

Cowboys are vaqueros. Caballeros are gentlemen.
Thanks. I know that but get mixed up. Lol.
Yum! Use a chopstick to get rid of air in the jar.

Actual pickled red onion in Mexico many places use pineapple juice and lemon or lime juice
9/10 I deducted a point for not putting any hard-boiled eggs in there too!
i have trouble chopping so i have a push down cube chopper same mathod its good on brats too
Pickled jalapeño mmm
I got a few hundred onions in the garden so I think I can spare some for pickled onions this year.
And you can scrape at a 45. The same angle as sharpening❤

Add a bayleaf or 2
Wonderful recipe!! Thank you very much❤ I wonder if you could do a mustard pickle if possible I would love to know your take on it?
Great video. I enjoyed your sauer kraut video too. Do you ever make pickled carrots Mexican style?
Not yet, made pickled Mexican onions though. Yum.
You reminded me of this verse:
