TM6 just had an update and they changed all the recipes that had high heat from having the top in the lid to nothing or the simmer basket instead because of safety reasons…it never happened before but there could be a chance with the high heat setting a pressure like build up with the top of the lid in place and when the top is taken off, it could splash out and possibly burn somebody, that’s why the change, hope that helps…🙋♀️ I saw a video about it from an Thermomix consultant in Austria that explained this.
The vinegar is in the clean up...you could just do half the water so it's just as strong I would guess but it just might not clean up the sides as well.
