Thank you for the recipe!! I was wondering if it would be possible to simply mix all the ingredients together in a high speed blender and then just sprinkle the xanthan gum over top and then blend very well? I know I recently made a sugar free maple syrup recipe that I made in the blender and the last step was the addition of the xanthan gum to thicken and I mixed it at low speed at first to incorporate and then at high speed to ensure it was thoroughly mixed and then it thickened. No heat was required to thicken the maple syrup which I found really interesting. So I’m wondering if I made the filling for the tarts using a blender if it could save the step of whisking over boiling water and then worrying about tempering the eggs etc... while the ingredients are expensive I’m hesitant to experiment in case of it resulting in an epic fail. Can you provide your opinion on if using a blender could work? I would blend it in stages I think with the cheeses and butter and erythritol (I think I would use powdered in the filling because I would have to store these in the refrigerator and consume over the next week and I’d be concerned that the granulated could crystallize which ive experienced with erythritol. Then I would add the other more liquid ingredients and blend them well. Do you know if these would freeze well? Also do you know if a flavouring extract could be added? Perhaps a lemon or lime also since you mentioned gelatin could be used in place of xanthan gum I’m thinking a box of sugar free strawberry jello sprinkled on top and blended well may give them a delicious strawberry flavour and a pink color? Also with the addition of sugar free jello there would be no need for the erythritol as the sugarfree jello powder is sweetened. Do you think that would work? Have you tried it? Sorry please don’t think I’m trying to change your recipe I’m really not, I have a physical disability and when I can use my blender to mix up ingredients it just makes it so much easier for me. Also with the variations in flavour I like to find keto desserts that I can use as a base recipe for others. I think this may be a perfect recipe as a base? Or would I be better to just leave well enough alone and stick to the cheese flavour? I really value your experience and opinion thank you in advance for answering all my questions.
Hello! 😊 I’m not sure if blender would work as I haven’t tried that method yet in making these tarts. And I also I haven’t tried freezing it, it can only last up to 5days in the fridge inside an airtight container. Feel free to add any extracts. I’m not sure with the sugar free jello, I haven’t tried adding it to these tarts. You can also use powdered sweetener.

Hi MC! When frozen, the filling becomes ice cream-like in consistency. You can pop them into an oven for a few minutes to give it that “freshly baked” quality.

Ruby Francisco hi Ruby! I read that you can substitute flaxseed. For substitution, use the same weight of ground flax as you would xanthan gum. Then mix it in twice the amount of water (1 tsp of ground flax mixed with 2 tsp of hot boiling water). Though I haven’t tried it but it might work.
