So the question is.....when the torpedo reaches the distance we set.....does it stop running?....if so then can we set it a little farther off.....to take out another ship in a tightly packed convoy, esp. if the torp is set on Magnetic Pistol?

Torps have ranges of between 5 to 8 km. If MG, it is supposed to go off around the distance you fire, while an AZ goes off when it hits a target, meaning firing into a group of ships if you miss it could hit one behind it.
