I find myself getting lost and overwhelmed looking at my casters and deciding how to prioritize research for them and deploy them. The explanations on each spell make good enough sense, but the breadth of options makes it very hard to prioritize.

Not only useful, but for me at least - made me realize patroling with wolves can be a thing... And to start looking into how many summons are actually free...
Wolves are a fantastic summon for patrolling as they're upkeep free. This additionally makes them good for besieging castles, as although they do take supplies, if you can summon them you can make supply items most likely, so they're a cheap and effective wall breaking force!
Me after watching this video: Alright, Blood Hunting can be done. No, I am not going to try it any time soon. Even with all the useful hotkeys it's still too much micro for me to bother.
Blood hunting 100% increases your average turn time in the game, there's a lot of micro to do for an optimised blood hunting machine. If you're just playing single player and not worried about having it fully optimised, just blood hunt in 10k pop provinces with a lab in them, no one is going to think less of you for it! as @saliana3174 has said, they need to be on a commander patrolling in order to reduce the unrest in a province. Otherwise they will act the same as any other garrison unit, only used in defence of the fortification or province. Glad you enjoyed it!
So bloodhunting is in stage 18 of the turn order, while unrest alterations are at stage 39, so your unrest reduction or patrolling happens at this stage. This will reduce unrest in the province but after you've blood hunted, so whatever unrest value you have during your turn will be what is taken into account during the blood hunting step!

As far as blood research goes it's really nation dependent as to when you want to research and to what level, as researching blood magic means you're not getting levels in other schools of magic and can only be used by your blood mages, though some of it's spells are very powerful! What nation are you playing? I might be able to help you a little more if I know who you're playing, research goals for EA Mictlan versus Niefelhiem are vastly different after all!
