A traditional chopped cheese already has onions, but…whichever way you make it, it tastes good. (They also traditionally have mayo and ketchup on the bun as well as shredduce and tomato.). Chop the burger and onion before adding cheese then let the cheese melt down into the beef for more searing.

We went on vacation to Yellowstone shortly after that, & she was pulled over by a cop bcs he thought she was flipping him off. But her finger was bandaged up. He just laughed when he saw the bandage, not bcs he thought it was funny she hurt herself. I think he was a little embarrassed. I haven't seen that Mandolin since. 😅
Nice. But I would have just chopped the ground beef from the get go with diced onions browned it all up added shreaded cheddar until melted and served on a light rye bun like Mc D's old Cheddar Melts from back in the day.
I'll be honest, you can do that, but doing it this way gives more surface area and more caramelization and more flavor. If you just chopped it up, the ground beef wouldn't get nice and caramelized.

I like to add sweet peppers to the mix and wrap them in foil immediately removing them from the grill. It steams the bun up nicely! Yum!

Chopped cheese needs either Goya sazon or adobo, depends which bodega you go to. Also, most people I know get mayo on it.
