      It's absolutely genius! I would never in a million years think to cook one meat and then grind it up to mix with a raw meat, and then cook the mixture. Truly brilliant way to achieve the texture with the right flavor.

    I know you were being satirical, but I almost expected you to 'rewind the tape' one more time and say "Store-bought onions? Not for us. Let's grow our own! It'll only take 4 or 5 months, and what else have we got to do?"

    i went the easy route. I used leftover ribs, and Brioche buns. Sweet Baby Rays BBQ sauce, store bought pickles and onions. it was great! Totally resembles a McRib but better.

    You can reduce the amount of ridiculousness per patty by making more than just 4. Also, add some other stuff to the smoker. If the smoker gets lit, it gets filled with whatever I have that needs smoking... e.g I always put a little bowl of salt in there. Always nice to have a little smoked salt around.
    PS. Just remembered I have some pulled pork in the freezer. This might help stretch that as bit.

    I like bristles in my food, it gives it a rustic charm to it. Also if it gets lodged in my throat it gives me something to talk and complain to with other people in real life. It's an annoyance and an icebreaker. Thanks terrible painting brushes that people use oddly for cooking.
    I actually prefer to use textured foam rollers for my basting, really soaks up the sauce without applying much. Making me look important while I struggle to moisten my food.

    This is still a fun presentation, reminds me of Good Eats which I liked. I suppose I prefer the modern Kenji videos for their cleanliness and simplicity, but a little fun visual gags are fine sometimes.

    Wouldn't double cooking the rib meat have a net negative effect? Is the only difference the pieces of bark because it's impossible to get a bark on a patty?
    Also, do you think steaming the onions would be beneficial or does it need the sharpness of raw onions to balance the rib and pickles?
    Also, what's the difference between using chopped pork and ground pork?

      No. You get smoke built in too and no, doesn't have a negative effect.
