Filipino Sinigang Tamarind Soup/Pork Sinigang Tamarind Recipe/Sinigang na Baboy sa Sampalok

  • Sinigang is a soup that has a base of tamarind, tomatoes, and onions. A choice of meats or seafood are added, and then vegetables such as green beans, bok choy, taro roots or potatoes, and daikon radish. Sinigang is sour, and is usually served over rice. Today’s recipe is my family’s favorite. I often times cook this Filipino soup recipe and my American husband really loves it.
    Ingredients:
    ✅ 2 Lb pork ribs chopped into 1-2 inch pieces
    ✅ 1 bunch mustard greens (kang-kong)
    ✅ 12 pieces green beans (sitaw) cut into 2 inch length
    ✅ 2 pieces tomatoes cut into quarters
    ✅ 1 piece jalapeño pepper or chili pepper
    ✅ 1 piece onion sliced
    ✅ 2 pieces small taro (gabi)
    ✅ 10 to 12 pieces small okra
    ✅ 1 tsp salt
    ✅ 1 tsp black pepper
    ✅ 1 tsp cumin (optional)
    ✅ 2 tbsp patis fish sauce
    ✅ 2 quarts water or 8 cups water
    ✅ 1 pack Sinigang mix or tamarind pulp or paste
    ✅ 1 tsp sugar (optional) to balance the taste

    Total Time: 1 hr 15 mins
    Servings: 6 to 8
