Mediterranean Summer Menu
Ingredients:
For the Chicken Marinade:
▪8-12 boneless skinless chicken thighs
▪20g (1T + 1 tsp) salt
▪10g (2t) sugar
▪5g (1 ½t) black pepper
▪3g (1 2/3t) dried oregano
▪50g (1/4c) olive oil
▪30g (1/2c) parsley, chopped
▪40g (8-10 cloves) garlic, minced
▪Zest of 2 lemons
For the Grilled Broccolini Pasta Salad:
▪150g (2/3 cup) red wine vinegar
▪15g (2t) honey
▪15g (1T) grainy mustard (Maille brand recommended)
▪1 medium shallot, finely diced and rinsed
▪150g (2/3 cup) extra virgin olive oil
▪125g (1 bunch) broccolini, stems trimmed
▪Salt, to taste
▪225g (1/2 lb) bowtie pasta
▪75g (1/2 cup) marinated olives, rough chopped
▪50-75g (1 whole) red bell pepper, diced
▪75g (2/3 cup) grated Parmesan cheese
▪50g (1/4 cup) sun-dried tomatoes, chopped
▪10g (3T) finely chopped parsley
For the Citrus and Fennel Salad:
▪6 large oranges
▪2 grapefruits
▪1 fennel bulb, fronds reserved
▪1/4 red onion, thinly shaved
▪3-4T chopped roasted pistachios
▪Olive oil, for dressing
▪1-2 tbsp champagne vinegar or lemon juice
▪Flaky salt
Instructions:
For the Chicken:
1. Combine salt, sugar, black pepper, oregano, olive oil, parsley, garlic, and lemon zest in a medium bowl. Add the chicken thighs and toss to coat evenly. Marinate for at least 30 minutes, or up to 3-5 hours in the refrigerator.
2. Preheat the grill to 550°F (288°C). Lightly oil the grates. Place marinated chicken thighs on the grill over high heat. Grill until well-marked, about 4 minutes per side. Let rest.
For the Grilled Broccolini Pasta Salad:
1. Bring a large pot of water to a boil and cook the bowtie pasta according to package instructions until just past al dente. Drain and rinse under cold water.
2. In a separate bowl, whisk together red wine vinegar, honey, mustard, and olive oil. Add rinsed shallot or onion.
3. Toss broccolini with olive oil and salt, then grill alongside chicken for about 2-3 minutes per side until charred but still crisp. Chop into ½ inch lengths.
4. Combine cooked pasta, dressing, grilled broccolini, olives, bell pepper, sun-dried tomatoes, Parmesan, and parsley in a large bowl. Toss well and hold at room temperature before serving.
For the Citrus and Fennel Salad:
1. Supreme oranges and grapefruits by removing all peel and pith, then segmenting the fruits.
2. Thinly shave the fennel bulb on a mandoline, stopping before the core. Pick some of the fronds to use for garnish.
3. Arrange citrus segments in a serving dish. Top with shaved fennel, red onion, and pistachios.
4. Dress the salad with olive oil, vinegar or lemon juice, and sprinkle with flaky salt.

The citrus and fennel salad is just like one I used to get at B.Good. Except theirs would add avocado, goat cheese and a mint/citrus vinaigrette, plus some leafy bitter greens to the salad. And I would triple the amount of fennel and pistachios versus what you used, because I love those ingredients.
Made a sourdough starter and baked my first bread yesterday! Today I toasted some seeds, and will be baking the seeded version tomorrow.
Find some yogurt, olive oil and milk pita bread recipes..amazing soft, simple, they freeze well, plus they are great summery finger foods..
I don't love anyone enough to prep that much citrus like that 😂

@Brian I started using the Non-stick spray on my BBQ before I turn it on. It allows me to get really good coverage on the grills without the potential of blowing my hand up. Once the BBQ starts coming up to temp the excess burns away leaving a very nice cooking surface. Over time the grill becomes less and less "sticky"

That pasta salad and chicken thighs will definitely be added to my lunch rotation. An italian-ish pasta salad with air fried chicken thighs is common lunch for me during the summer. Need food thats good cold since I dont have a way to heat food during the day. I also don't really want hot food after sweating all day.

We make a very similar orange and fennel salad. But instead of the onion and other toppings we keep it simple with just orange, fennel, and shaved parmesan. Delicious!

I really enjoyed this video, and in particular that it was free from the scourge of unpleasant chewing sounds directly into the mic!
Something fun I've done with similar recipes to these thighs is cut in half the zested lemons and hit them, cut-side down, on the grill for a few minutes alongside the chicken, and then squeeze the grilled-lemon juice through a strainer onto the chicken.
Dig the dinner party concept, more please!

I especially love your videos that 'aggregate' meals like this video, and your previous videos on meal prepping. There's not much content out there for quality large meals/feasts, it's always videos on getting a ton of food out with suboptimal presentation (think Quang Tran) OR large feasts that aren't ideal in normal kitchens (think ChefSteps) - which aren't bad obviously!

I usually avoid grilling chicken because it is so dry. Even Sous Vide, it's not my favorite. But after about 90 minutes, I put a bunch of these on the grill and they were amazing. So friggin' great! Will be adding this to my Guy's night grilling rotation.
Maille is my favorite mustard brand, though the price shock can be a lot for some folks. If you have a Trader Joe's in your area, their whole grain dijon mustard gets you 90% of the way there for less than half the price. Stuff slaps.

Trader Joe’s Dijon is also a fantastic mustard.

I've never had a pasta salad I like, but I thinks its because growing up all anyone around here ever made was the standard pasta with italian seasoning style salad. This I would give a shot.
that looks delicious. just back from Italy and that fennel is always on their salads and almost replaces dressing - just some olive oil and salt and, maybe lemon. they make a durn good salad over there.
All the citrus peels and core could probably be a nice addition to fizzy water or the white wine you talk about 🤔
Definitely will be trying the pasta salad. Might be adding some buffalo mozzarella and add grilled zucchini instead of broccolini.
Wish I could make the citrus fennel salad, but I’m allergic to fennel. Black olives might work instead, at least I’ve tried that combination before and loved it.
You can also wet the onion/shallot and put it the the freezer for at least 10 minutes before diceing
Every time you try out a the raw sauces like that time you sipped on worcestershire or now trying raw grainy mustard it's simultaneously the most professional "chef assessing the quality of ingredients to isolate the flavor characteristics" thing and the most disgusting "drinking straight up fermented achovies juice" thing ever

I recall an online recipe for avocado, cherry tomato, and corn salad with basil dressing. I think it might have been from the Barefoot Contessa, but I cannot find it now. Have you ever made such a salad?
Yo Brian. Im no health nut, and i suck at being fit ;) but i do know how NOT to run. It could have just been a bad step when you were on that treadmill but i noticed you were planting your heel. if this is a habbit you gotta be killing that back with all that impact. i say it cuz i used to run with horrible form and wasn't till after a coach i learned that i didnt have to be in excrutiating pain. if your form is flawless and this was just an odd step, then all is well i just had to be Mr Opinion when you didnt even ask for it. Also, I love your channel. Its educational, fun, and i appreciate you.

Why are you so dehydrated that you need to drink that? You could just try water and food. Those two pair well to give you hydration and essential minerals.
