Dinner Rolls and Pandesal (TESDA Standard)

- Hi bakers!
On this video I will teach you a universal dough that we can use in making varieties of bread. We call it soft dough.
Ingredients:
1 3/4 + 2tbsp cup bread flour
1 tsp Instant dry yeast
1/4 cup sugar
1/2 cup water
1 pcegg
2 tbsp + 2 tsp shortening
*extra flour for dusting
*extra shortening for greasing
*1 egg for egg wash
We bake it under 180 degree celcius for 15 minutes.

I did this recipe many times
I took the Bread and Pastry NC2 national exam years ago... Youre given 6 hours to complete four specific recipes: Soft Dinner Rolls x10, Lemon Meringue Pie x1 and Lemon Meringue Tarts x5, Cream Puffs and Eclairs *10 pcs, and Vanilla Chiffon Cake x1 and Vanilla Chiffon Roll x1. I am the first to finish out of 30 people who got the exam at 2 hours and 44 minutes (all excellent rating). I missed my culinary school days, one of the best days of my life ❤

Yung timbang po ng bread depende napo sa inyu or sa nagturo po sa inyu okay lang po yun. And importante po yung technique at process ng paggawa po 😊

Hello po, lagyan pa po ba ng lard or grease yung baking pan bago lagyan ng dinner roll for baking?
Yes, i grease mo yung pan mo ng any fat bago ilagay yung bread dough
Are u using a convection oven po? Ask ko lang po. How do you adjust po? kasi diba usually conventional oven po ang usual na ginagamit ng iba. What if yung recipe is ginamitan ng conventional oven, what adjustment u're doing po? I'll appreciate your answer po. Thank you.
I use both po. Sa convectio oven po nakakapag salang ako ng maramihan like 2 tray/layer. Pero kapag conventional po 1 layer lang salang ko kasi di nagiging pantay ang luto dahil walang fan tp circulate the heat evenly
Temp will be the same ang nagiging kaibahan lang yung capacity na kaya mong isalang po

Hello chef ask ko lang kung kapag ba nag reresting yung dough kailangan ilalagay sa ref??
Hindi po Maam kailangan sa room temp or medyo warm part ng bahay nyu para umalsa po siya agad. Kapag nilagay nyu sa ref po yung dough babagal ang pag alsa kasi kailangan ng yeast ang mainit na temp po.
Sir pag instant yeast no need na ibloom? Direct na mix sa ingredients?
Yes po kapag instant yeast pwede ihalo agad sa dry ingredients, wag lang po itabi sa salt kasi papatayin agad ni salt si yeast. Pero kapag more than 3months na (open and stored) ang instant yeast pwede mo rin namang i bloom to make sure okay pa siya.
@@chefremz9431 possible po kaya during tesda assessment na ipatong sa ibabaw ng preheating oven yung bowl na may dough para mas mabilis po sya umalsa?
@@chrxstxllx technically speaking pwede naman po wag lang siguro sobrang init yung ibabaw ng oven po or ipatong mo lang dun for 10-20mins then remaining minutes sa room temp napo. Pwede po kasi mamatay din ang yeast kapag sobrang init po.

Yes pwedeng evap po, same measurement po.
Hello po. Kaya po ba mas basa yung dough ko ay dahil all purpose flour gamit ko? May iba pa po bang reason?
Possible reasons:
1. Yes dahil sa APF kasi mas mahina sumipsip ng tubig ang allpurpose flour compare sa bread flour
2. Pwede din nagkulang sa takal yung flour
3. Nasobrahan ng konting liquid
4. Extra large yung egg

1. Hindi sapat yung oras ng pag ferment/pagpapaalma mo
2. Masyadong malamig sa room or bakung area mo (nahihirapan umalsa ang tinapay sa malamig na temp)
3. Baka masyadong konti si yeast

Hello, for me Soft roll is the general term for yeasted bread that are baked with dairy and fat then usually sweetened po. Yung mga examples naman po ng soft roll ay dinner rolls and burger buns po.

I use salted butter po most of the time kaya di ako naglalagay asin sa dough. If youll use shortening instead, yes lagay po ng asin.
Mas ok ito kaysa dun sa recipe ng pinanggalingan ko, tapos masa 7 minutes lang daw. Kaso sa assessment namin nextmonth dapat yung recipe nya sundin
walang salt chef?
Hello po, you may add 1/4 tsp of salt. I dont usually put salt on my bread kasi most of the times binabrushan ko ng melted butter (salted) on top mga bread ko except the pandesal hehe

Hello po pwede naman pero kailangan magbawas ka ng 1/4 cup sa liquid ingredient mo. Kasi kapag nagsobra ng liquid ingredient like egg po magiging super wet ang dough at mahihirapan umalsa po

Ihave separate video for ensaymada po. You can still use this recipe for ensaymada but replace water into milk then replace shortening inro butter po
