I think this has finally inspired me to make my own tamales. Lived in Texas for 13 years, moved to upstate NY 7 years ago and been craving tamales but can't find them anywhere here.
Good stuff! Over the weekend I did a big cook for the work holiday party and did a classic SPG pork butt and a big mess of Barbacoa with a rump roast, beef cheeks and osso buco. I followed the chud style of barbacoa cook and threw in beef fat, stock, 35 cloves of garlic, and a fat pinch of mexican oregano in the crock pot after smoking for about 4 hours. Both turned out great but the barbacoa was the best I've ever made. Thanks for the inspiration!
Freezing well is an understatement. Have a family member who does these and sells during the holiday. I always buy a dozen dozens .. place in the freezer in their husks. After frozen then I pack 6 and vacuum seal into individual packages. My supply lasts till the spring. One day I’ll try a batch on my own with these recipes. Happy holidays y’all!!!
That was a really cool episode Bradly! Three different kinds too. Reminds me of the family tamale day as a kid! It was so awesome to see your BQ family making them, with movie, cards, and having a night of it. The tamales look really good by the way, need to give these a try. Ask the abuelitas about the coin trick. Add a coin to your water. It click-clacks in the boiling water. When you nolonger hear it, add water so you don't scorch the bottom of your pan.
I've always wanted to try tamales, but haven't yet. If I hadn't watched this, I 100% would have tried to eat the corn husk whenever I do try them lol. I always thought that was part of it, not just something to hold it together. Thanks!
Hey Brad a question for you. I have heard Evan mention adding vinegar to the spice mix when making Chorizo, so if you do decide to add vinegar, how much please? I have had some Chorizo that to me seemed to vinegar forward, and I thought it should be subtle.

Use a piece of Saran Wrap. place over the filling and spread it out with your fingers Or palm of hand, on the Corn Husk. Lift it off and FOLD THE TAMALE 👉👉 I like to bundle them into 12. Make it faster to put into the pot to steam, and to take them out > Saran Wrap the bundles and foil them, mark what they are. > Then there ready to be frozen

It's crazy how exhausting it is to make all the fillings over 2 days like you did hear. I just turned out about 150 tamales on the 7th and 8th and dang I was ready to get horizontal for a day! Personally I like the Maseca for Tamal - the flour with the green banana leaf wrapped tamale in the picture. It produces a silky texture when steamed. Also, I do my masa a little more spreadable, but I do like how yours were able to hold their shape better. Nice job! Which protein did everyone think was the best?

For me using a plastic Bondo spreader works the best for applying the masa onto the husks.

I did this exact same thing with some smoked chuck roast in some red sauce with friends and family this past weekend! Love the content!

We use a 4 inch plastic throwaway putty knife for spreading masa works great
they make plastic trowels for tomales too, same thing as a drywall towel but with a raised edge high enough to smear it just thick enough

I've been thinking of using that chorizo seasoning to make pulled pork. I've been using it to make chili, and it's awesome.

Why not use beef tallow instead of lard? It comes out great.
I Thought About it, But Lard is Traditional and For My First Go Around I Wanted to Try and do it Right,, Next Time Will Likely Be Tallow!
