I think this has finally inspired me to make my own tamales. Lived in Texas for 13 years, moved to upstate NY 7 years ago and been craving tamales but can't find them anywhere here.

Good stuff! Over the weekend I did a big cook for the work holiday party and did a classic SPG pork butt and a big mess of Barbacoa with a rump roast, beef cheeks and osso buco. I followed the chud style of barbacoa cook and threw in beef fat, stock, 35 cloves of garlic, and a fat pinch of mexican oregano in the crock pot after smoking for about 4 hours. Both turned out great but the barbacoa was the best I've ever made. Thanks for the inspiration!

  • @mike_adams

Freezing well is an understatement. Have a family member who does these and sells during the holiday. I always buy a dozen dozens .. place in the freezer in their husks. After frozen then I pack 6 and vacuum seal into individual packages. My supply lasts till the spring.
One day I’ll try a batch on my own with these recipes. Happy holidays y’all!!!

It was so awesome to see your BQ family making them, with movie, cards, and having a night of it. The tamales look really good by the way, need to give these a try. Make it faster to put into the pot to steam, and to take them out > Saran Wrap the bundles and foil them, mark what they are. > Then there ready to be frozen

It's crazy how exhausting it is to make all the fillings over 2 days like you did hear. I just turned out about 150 tamales on the 7th and 8th and dang I was ready to get horizontal for a day! Personally I like the Maseca for Tamal - the flour with the green banana leaf wrapped tamale in the picture. It produces a silky texture when steamed. Also, I do my masa a little more spreadable, but I do like how yours were able to hold their shape better. Nice job! Which protein did everyone think was the best?
