Christmas turkey, cranberry sauce and all the trimmings stuffed into Yorkshire puddings every year I can remember. This is how the Yorkshires are to be made this year.
Looks great! I smoke A LOT of chuck roasts. I follow basically the same method. Smoke until I have a nice bark. Then braise. However, I braise in a covered pan in the oven and only a couple hours until it's just ready to shred. This avoids the need to concentrate the braising liquid because the meat doesn't sit in liquid for so long. You don't end up with that pot roast texture/flavor, and the pepper doesn't interfere by becoming hydrated. 9 times out of 10, we make tacos with the meat. Homemade tortillas, cilantro, lime, crema, salsa Verde, cotija. Hard to beat!
So RE: smoked chuck roasts. I've done more than a few "brisket style" on a pellet smoker and they've turned out FANTASTIC. Granted, not as good as actual brisket. But they turn out super-tender and -flavorful. Great to serve as a main by itself (standard meat, potato, green plate) or for slicing thin for sandwiches. Hidden gem of a cut if you treat it right.
Yorkshire pudding burrito idea - bangers and mash Texas style. Homemade pork and beef sausages smoked on the grill with smashed fried tater cubes (extra points if fried in duck fat) and smoked onion gravy. :-)
So this inspired me to try using chuck roast for taco meat instead of last night's brisket. (Every time I make brisket, we make tacos the next day, and they're glorious) I smoked a 3lb chuck overnight to about 140°F and then put it in the crockpot on low until dinner time. Strained, shredded, and reduced down the juicy bits, then reintroduced them back into the meat. 1. They were REAAALLY rich and flavorful 2. They were far too greasy, lots of rendered fat running down my hairy chin. 3. They were wonderful. Thanks for the inspiration. It's a nice way to make tacos without plain ol ground beef or $75 brisket.
You should do a BBQ version of a traditional Yorkshire Sunday Roast. Some real smokey/roasty opportunities with some of the veg we eat on there. Great job, and big love from Yorkshire.

Last month HEB had Wagyu Chuck Roast at $8/#. I should have bought them all. So good! I Smoked one with SPG. I made a Ragu to go with Pappardelle noodles. I made an amazing stew.
Whole hog is perfect for a Yorkshire pudding wrap. For full authenticity you need some carrots and a side of pigs in blankets (sausage wrapped in bacon)
I've done similar but for breakfast using Dutch baby, sausage, fried eggs. Now i have to go dig in the freezer for a chuck...or butt whichever i find first.
Your should make a Yorkshire pudding burrito with braised goat, a medium spicy green curry on top with a little saffron rice in there and some Indian spices.
Seeing as our national dish in the UK is chicken tikka masala, something with a British-Indian twist would be great. Tandoori lamb chops on the Chud Box taken off the bone and put in a Yorkshire pudding with some vegetal goodness?

Personally I would of dropped the egg ratio in the Yorky batteer and gone for beef Shin or Cheek as the beef or as you said short rib, either way i would of smashed the thing

DAYUM that looks good! Fine work. The only change/addition I could maybe see is using some tangy Southern collard greens or even the spinach tossed in a light red wine vinaigrette instead of the plain spinach to add a touch of acidity to cut through the rich, savory flavors a bit. Great vid, as always!
Unfortunately over here people are terrified of over seasoning which is ridiculous but the older generation just don't get it that's why you can get s and p in any place you go

I made Yorkshire pudding at thanksgiving, but they were medium sized. Ended up making Yorkshire Tacos with them. Roast ham, carrots, potato, gravy.

Alton Brown made this years ago and wrapped it around a slab of prime rib. Looked awesome then, looks awesome here.
I make these all the time. TIP: If you make it on a small rectangular cookies sheet, you can easy roll it up as a burrito.
