- Where can you get the best bibingka in the city? Bibingka is a special Filipino rice cake that is usually eaten during Christmas. On this video, we will try the traditional Masing’s Bibingka, the newcomer Bibingka Manila, and Deli by Chele’s innovative “Chika.” These are available throughout the year for everyone to enjoy, so we thought of featuring very different versions of this kakanin just in time for the holidays!

As someone who has been celebrating Christmas away from the PH for a few years now, I am always craving for bibingka during the festive season. The premium ones looks so decadent, but we can't deny that the the simple and traditionally made ones are the ones we keep going back to.
I love the old school bibingka, rice galapong with smoky taste.

As a foreigner that only recently visited the Philippines for a vacation, I think that bibingkas are among my top favorite food from that country. Lami kaayo labi na kung bago luto.

We should start thinking on the aesthetic on our foods. And Bibingka with presentation of its complete toppings of Muscovado, Grated Cheese and Coconut makes our Bibingka looking more culturally beautiful, like Tacos of Mexico and Paella of Spain.

My favorite are the ones I can buy on the street. I would drive from my grandmother's house from Medellin, Cebu and pass by bibingka vendors on the street and you can just smell them. They taste amazing and cost pretty cheap!

The best bibingka for me is still the Visayan/Mindanao version. Almost charred and white-ish. Almost mochi-like in the middle. Just rice, coconut milk, sugar (I think?), and some oil. No additional ingredients. I never got the taste for the cakelike bibingka of Luzon.
sounds like royal bibingka from Ilocos in texture (color there is yellow because of egg, i think)
I've tried the Ilonggo version but with more sticky coconut, boring siya for me. If there's no salted egg it's just another type of sticky kakanin.
@@redfullmoon Meh. The NCR bibingkas today aren't even made with galapong. They're made with rice flour. Toppings lang yung nagdadala. Provincial bibingkas are still made in the original way: with galapong, which is rice soaked overnight and then pounded into a paste. That's how it achieves that mochi-like consistency in the middle. Bouncy and chewy, hindi cake-like. When you pull it apart, walang crumbs. It just tears. The use of galapong also gives it the distinctive slight hint of fermentation, coupled with the smokiness of the charred and toasted parts and the burnt banana leaves, it is what gives it the flavor aside from the slight sweetness of the coconut milk and sugar (when added).
Bibingka should be more similar to puto in consistency. Kasi they use exactly the same ingredients. Ang difference lang nila is bibingka is baked, while puto is steamed.

I agree, Masing's is the best, you cant get that char smoky flavor from the others.

The best bibingkas are sold in neighbourhoods, not malls. Iba ang kalidad at lasa. I don't recommend buying bibingka sa mall. Please walk around NCR neighbourhoods and look for bibingka stalls. They're everywhere during Christmas season.
