Since hubby and I are on keto, I will use riced cauliflower instead of regular rice. Also, I’ll add some black olives. 😋Thank you for sharing the recipe.
Not doing keto, but I LOVE riced cauliflower!! My fall crops include cauliflower and the best carrot I've ever had. The Kyoto Red. Rice the carrot and mix in with the riced cauliflower, steam or microwave, and I add butter, salt, and pepper for an amazing side dish!
I am surprised to see that the canning jar Queen mixed her dressing in a bowl! I always mix it in a pint canning jar and just shake it up. It is also easy to store any extra right in the jar. Love your videos especially the cooking and the baby animal ones.

if you put your cooked pasta back into the strainer, place the strainer over the pot then you can slightly rewet them when you want to use them to break them apart if they stick together. Also, the water drains right back into your pot so no mess!

I make something very similar with quinoa, avocados and cayenne instead of the spices you used. My kids (all under 5) love it. I also love using my crockpot outside.

Love all the receipes for chicken...the cornish are large and with just the two of us...give us several meals...love these recipes - I can "taste" the goodness and feel the crunch of fresh veggies...love my carbs, so perfect for me...lots of cilantro please...love that chopper, if you have frustration on something, you can take it out and chop veggies at the same time, grin. :)
I would probably only eat that rice and chicken Salad hot, but glad you enjoy it cold. Sounds like something I could make and freeze for over the winter.

I am a Texas cattle rancher working in high temps here is typical I stay hydrated wear all cotton clothing and a big hat. I grill meats on week ends and slice them into salads week days after work.
Crock pot outside, I have always done that when it’s hot, or use a bbq, or use a hot plate outside. Anything to avoid cooking indoors. Thanks for the validation!
Just a note to add that the rice salad would be a good source of complete protein without the chicken. Tomatoes and corn combined are a complete protein, the beans and rice are also a complete protein. With the chicken this salad is a very high protein dish!

I have a large pan of Spanish rice in fridge. Stuff peppers and bake in outdoor grill. Does not heat house in hot temps.
