    Imagine the sweet aroma of ripe peaches roasting in the oven, their natural juices intensifying as they caramelize. Now add a touch of crushed amaretti cookies, creating an irresistible combination of flavours and textures. This is the "Roasted Peaches with Amaretti" or "Lu Pèssegue Farcit", as they say in Provencal. A summer season desert extremely easy to prepare with incomparable flavours.
    The Roasted peaches with Amaretti have a fascinating history that stretches across both the county of Nice in France and the Italian region of Piemonte. In this video, I will show you how to make vegan amaretti cookies to use to make the succulent "Roasted Peaches with Amaretti".
    We will dive together in history to discover the origin of Peaches and the origins of Amaretti cookies and unravel the connections that exist between Provence, Italy and even China!

    INGREDIENTS for VEGAN AMARETTI COOKIES
    - 250g almond flour
    - 120g caster sugar
    - 90g powdered sugar
    - 1 teaspoon baking powder
    - 50g aquafaba, the liquid from a chickpea water can.
    - 14g amaretto liquor or sirop d'Orgeat (almond syrup). You can also use 1 tsp bitter almond extract.
    - 1 teaspoon vanilla extract
    - 5 tablespoons powdered sugar for dusting
    - olive oil
    INGREDIENTS for ROASTED PEACHES with AMARETTI
    - 3 peaches
    - 60 g Amaretti biscuits
    - 16 sweet almonds
    - olive oil
