Hi, I've been using the HOG2 for years, and one way to figure out past fader settings is to go through each one when a preset is selected, and sliding it up and down until the preset switch stops blinking. Then you've found the original setting for that slider, and you can keep doing this for all of the sliders. :)

Unrelated, but I've read that the maneco labs sweet 16 only consumes 9v 80ma, and I was surprised to read that for what seems like such a complex pedal. Would appreciate insight from a working musician who owns one. And awesome demo! The hog is super underrated

After owning it for a few months, I really need to watch this again.

With regards to the presets & recalling the slider settings, just take a photo for future reference. Or if you're old school, write/draw them out.
