  • COSY CHRISTMAS BAKING: 3 OF THE MOST POPULAR CHRISTMAS BISCUITS IN GERMANY// Good evening, We received some questions whether we would bake again during the festive season and oh yes, of course! This time we share 3 very popular Christmas biscuits (Weihnachtsplätzchen) with you: Vanillekipferl (vanilla crescents), Zimtsterne (cinnamon stars) and Linzer Plätzchen. All of them very easy to make and simply part of a German Christmas. Hope you will enjoy. Kirsten & Joerg x

    RECIPE 'VANILLEKIPFERL:
    Ingredients
    140g ground almonds
    210g soft butter
    280g flour
    2 egg yolks
    40g sugar
    pinch of salt
    about 100g icing sugar
    4 sachets Vanillinzucker
    Method
    Kneat the ground almonds, butter, flour, egg yolks, sugar and salt. Create 3-4 rolls (diameter about 3-4cm). Put into cling film and cool in fridge for about 1 hour.
    Preheat your oven to 150 degrees Celsius. Cut the rolls into slices of about 1cm. Create 'Kipferl' and put onto baking tray with baking paper. Bake for about 20-25 minutes.
    Take Kipferl out of the oven.
    Mix icing sugar with Vanillinzucker and batter the Kipferl in the mixture while they are still hot. Enjoy!
    RECIPE 'LINZER PLÄTZCHEN':
    Ingredients
    300g flour
    100g ground almonds
    120g icing sugar
    1 vanilla pod
    pinch of salt
    200g soft butter
    2-3 egg yolks (depending on the size of your eggs)
    100g raspberry jelly or jam
    2 tbsp icing sugar
    Method
    Kneat the ingredients for the dough. Put the dough into the fridge for about 2 hours. Preheat the oven to 180 degrees Celsius. Roll out your dough to about 4 mm. Using Linzer cookie cutters, cut an even number of bottoms and tops. Bake for 7-9 minutes. Let the biscuits cool. Warm up the jam or jelly and spread onto the bottom half of the cooled biscuits. Dust the tops of the biscuits with icing sugar and put them on top of the jam coated biscuit. Enjoy!
    RECIPE 'ZIMTSTERNE'
    Ingredients
    2 egg whites
    100g fine icing sugar
    350 ground almonds
    3-4 tsp ground cinnamon
    For the icing
    1 egg white
    100 very fine icing sugar
    Method
    Beat the egg whites half way. Add the icing sugar and keep on beating until stiff. Add the almonds and cinnamon and mix well. Wrap the batter in cling film and put into the fridge (at least for 2 hours, even better overnight).
    Sprinkle some ground almonds onto your worktop. Roll out your dough (1 cm thick) and use a star cookie cutter. Make sure to tip the cookie cutter into cold water in between as the batter is very sticky.
    Put onto a baking tray that is lined with baking paper. For the icing beat the egg white and add the fine icing sugar towards the until and then beat until stiff.
    Preheat the oven to 100 degrees Celsius. Use a baking brush to brush the top of the Zimtsterne with the icing. Bake the Zimtsterne for about 15 minutes. Enjoy!

    Brings back memories of my Austrian grandma's christmas cookies, she made all of these, but my favorite was her strudel, she passed in the 70's so it has been many years since I enjoyed them. But I still remember them, she was an amazing baker, and such a good grandma, miss her.

    My grandparents came to the US in 1906. Both my grandmother and mother baked a lot at Christmas. One of my favorite cookies was kipferl. Thanks for the memories.

      @@LaureninGermany a small German village in Romania called Zaderlach, it is close to Arad. They were ‘Donauschwaben’, Germans who settled there in 1737.

    I'm getting ready to make cookies using a 19th century 8" angel cookie cutter my family has had. Since I have no experience I've been on yt for recipes, decorating, tips, etc. A couple of tips I will pass on: use that plastic wrap on top and under the dough when you are rolling it out then you won't have to use flour. Try rolling the stars out a little thinner, then squeeze the cutter which will release the dough. I really enjoyed your video, as always!

    Wow! Thank you, Kirsten & Joerg, for this wonderful baking episode! The first batch resembles a kind of almond shortbread - YUM! The second batch, with the raspberry filling, looked amazing too! But, the cinnamon star cookies were my favourite because there was no flour in the recipe, much like Christmas macarons. I can't wait to get into the kitchen to bake these lovely holiday treats. Thank you for the inspiration and motivation!

    I like to make the crescent shaped cookies, we always called them Viennese Crescents. They really melt in your mouth. I love Linzer tarts too, thank you for the recipe! Enjoyed this peaceful cozy baking episode. Merry Christmas!

    They all look wonderful and I will definitely be baking the Vanillekipferl and Linzer Platzchen, which remind me very much of our British Jammy Dodgers!! Don't you just love the smell of Christmas baking. I will also be making Mary Berry's Mincemeat loaf, which is so yummy and lasts about a day in my house!

    Im not sure how many of those biscuits would have made it to the office with Joerg around :))) Will definitely make those jam ones because I have just made a spiced blood orange marmalade and those biscuits look like the perfect way to use it. PS: your Christmas wreath is beautiful I love it.

    Oh I love Linzer cookies. My MIL worked in a German Bakery here in Canada & brought me a whole box full to the hospital when I had my first daughter. I also love stollen.

    The biscuits look amazing and I love the Linzer cutters with the fancy two part cutters. When it says Raspberry Jelly, I’d say it’s perhaps written by American Germans! They describe jam as jelly!! So you were perfectly correct in using raspberry jam. I’ve been making handmade chocolates all week and tomorrow I make a birthday cake for my 11 year old nephew who loves Sloths at the moment…so Sloth cake it is!!

      I think most germans would use jelly for those, at least I do.

    The first cookies you made my mom makes them she got the recipe from my cousins grandmother who was German but they called them almond crescents and dusted them with icing sugar and they are delicious the second cookies ohh we love them too.     Hello Kirsten and Joerg oh how delicious those biscuits look ,so lovely .I love to watch you bake as you always make me feel so relaxed and the end results are always so good .I'm not a person for too many over laden sickly sweet things so they would be brilliant for me , thank you for sharing.Joerg looks so happy when delicious things come out of that oven ,and his face is a joy to behold ! I love to bake for my husband because he is like Joerg , appreciative .     I make these crescent cookies with pecans...we call them Kipfel....our family came to the US from Germany before 1900.
    Grandma also made kuchen, lots of baked goods 🙂.

    Those little half moon biscuits - the Kipferl are my favourites ❤️ I have a friend in Germany who lives between there and Switzerland and she bakes and then sends them to me every Christmas

    My favorite cookie (biscuit) is Almond Crescents dusted with icing sugar mixed with teaspoon of cinnamon! I first had them at my piano recital in kindergarten and rediscovered the recipe when older and was so excited to be able to make my favorite Christmas cookie!🥰🥰🥰🥰👍👍👍

      I made chocolate pretzel shaped cookies and dipped the tops in melted chocolate.. and I made German honey cookies! Tomorrow will be making Molasses Crinkles and an apple cake!! It’s take out for supper tomorrow night!! 😉😅❤️🎄

    Lovely. I've only had these as prepackaged treats. It was nice to see them made from scratch. As a hint, if you add a quarter teaspoon of allspice to cinnamon, it enhances cinnamon flavor. Happy Christmas and may you have a healthy, happy, prosperous New Year.

    Every Christmas, my Mom made a regular sugar cookie dough that I could cut into many shapes and decorate myself, but the traditional German cookies were always made as well. The Vanillekipferl we called "Vanilla Horns", she also made the Linzer cookies (some were half-dipped in melted dark chocolate), and then she made the German "thumbprint cookies"... very buttery, round cookies with a thumbprint (we used a clean thimble to make the hole) in the middle and filled with strawberry or raspberry jam and dusted with icing sugar when they cooled. Mom called those cookies "cholesterol bombs" because they were made with so much butter! I miss her holiday baking!

    I am definately in the mood to bake! Looks so delicious. Do you bake a big batch and freeze for Christmas? I loved baking at Christmas when i was a child especially yule logs. kirsten your dress and apron lovely. You make baking look effortless. Thank you as always.
