    My wife and I were floored by how good this was! Added chicken stock to the water when we boiled the noodles and then some grilled chicken with the cooked pasta. WOW! Thank you for the video!

    Amazing. I love harvesting nettles every Spring in the northwest. Word of wisdom for viewers: You do need thick gloves and long sleeves to avoid being stung by the nettles. This was a lovely video.

    Thank you for the video. What variety of nettle did you use? The only nettle I've ever had experiences with is the stinging kind. I wouldn't be able to harvest it without getting blisters.

    He has a point though. All it would take is a compromised bottle, one that perhaps has a fracture hidden behind the label/capseal that you can't see and there goes your finger when it cracks.

    Hi malwinpilak, this is stinging nettle for sure, and I do sometimes wear gloves to harvest it but in Italy, I learned that if you harvest it with the tip of your fingertips and with a light touch, it really doesn't sting at all. Thanks for asking :-)

    Very interesting. I've had nettle tea (very good) and have used nettle shampoo (very popular in the part of Europe I'm originally from). Now I'm keen on trying nettle noodles. :-)

    Cool. As a side note, do NOT use a wine bottle as a rolling pin! It's very easy to snap the neck of the bottle off, and you can not only give yourself an awful gash, but you'll wind up with broken glass in your food too.

    Our grandfather Alfredo Di Lelio, creator in 1908 of fettuccine all’Alfredo, opened Alfredo in 1914 in Rome after leaving the first restaurant run by the mother. In 1943 Di Lelio sold the restaurant to others outside his family and reopened his restaurant “Il Vero Alfredo” in Rome, Piazza Augusto Imperatore 30 (in website information on franchising), which is now managed by his nephews Alfredo and Ines. Other restaurants Alfredo in Rome do not belong to our family.

    Well alright, that was not very intimidating at all, I think I'll go buy some fresh spinach tomorrow and try it with that stuff. never had nettles, not gonna invest time into it if I am entirely unsure of the finished product.
    Very well presented, miss. I like the video style and I like the way you cook, totally wish I had your kitchen. and your cat. and that garden too. Ah well, no point wishing when I can make the rest of it happen on my own, yes?
