Wow!! These look so good. I make a keto version of sausage balls that uses almond flour instead of the Bisquick, (type2 diabetic). I am going to add the cream cheese and Rotel and they should be amazing!! I'm thinking of using the Rotel lime/chili . So glad you popped up on my TH-cam recommended. Some suggestions. Mix the sausage, rotel, cheese together and then add the bisquick. Then refrigerate the dough until throughly rechilled. I would go with 1/2 the size u used, bc they rise. These are meant to be served hot, and so are usually cooked in batches or served on hot plates. You'll find they taste better warm.
