Me and my son (who is always the one requesting sausage balls) made these and the dip today. We all loved them. This will be my go to sausage ball recipe from now on. I had some Swaggerty’s hot sausage on hand. It is too hot to eat with breakfast for my whimpy tastebuds but it was just right in the sausage balls. Thanks for sharing!

Absolutely right about using only freshly grated cheese from the block of cheese. It melts so much better. I never buy the preshredded stuff. I could still see the pieces of cheese in the sausage balls from the "bagged" cheese that you had to use. I bet you won't forget to buy that block next time! That cellulose, etc, that they use to keep it from clumping in the package wreaks havoc on the recipes!! Never use it in macaroni & cheese recipes!! LOL, Melaney from SoCal. Hey Matt, me again. I just made these, OMG, they are fantastic. That honey mustard sauce is the bomb. Except I didn't have dijon, but I used a cranberry port mustard. State law in the US. Should be a provincial law here in Canada. And you're right, so easy to make. keep those good groceries coming. God Bless.

I try to make something new each year for Thanksgiving and Christmas and I just tried this recipe (without the tallow) and unfortunately this wasn't a hit with the 20+ group I shared it with. I think it needs a little umph and the "hot" sausage didn't do it. I used the exact same sausage and it wasn't hot at all. I think, if I ever make this again, it needs hot pepper flakes in it or hot sauce. Thanks for the recipe though and Happy Holidays!!

Never tried the cream cheese deal. Will try it. I quit using the mixer. Just flour my counter top with baking mix, flatten out the sausage in a rectangle on that, season with the powders, then top with baking mix and cheese. Sort of roll it up like a burrito and the mix it with my hands good. Guess I could spread the softened cream cheese over the sausage layer to try your version.
We made this today and I give it a ten star that was some good grocery’s also I have a suggestion make a corn beef hash omelet it is awesome try it. Love you brother

I'm curious as to why you took the temperature up to 205° ?? Ground sausage is done at 160° .. Good cook and I will be trying these next week .. THANKS
It's a weird thing really. Say like bread when it's done, it's about 205° (baked potatoes too). I wanted to be sure the dough was done along with the sausage. You're correct that the sausage needs to be that temp, however I doubt the ball would be done at that temp.
