The huge difference is Google Assistant Theme. In Android 12 lite Theme was available but in Android 13 only gave us the dark Theme. Why? Should it be same on Android 14?

Changelog says One UI 5 is smoother animation. The app switcher has very bad stuttering, worst than 4.1, fingerprint unlock also stutter. The navigation buttons also react slower. The notification shortcut icon is smaller
if you pay attention, on the cell phone with Android 12 it activated 4G of ram plus, while on the one with Android 13, it did not activate the ram plus.
I see you went back to normal buttons in your navigation bar, I did it as well... it was difficult to swipe on instagram and other apps with the Swipe Buttons.
so much easier and more practical with the navigation buttons. The swipe up, either goes to home screen or opens the app switcher, so annoying. And you try swipe the navigation with one hand. can you always swipe vertical, just use the buttons.

Ask a local repair shop. If you can find android 12 firmware that is on the same binary as your android 13 binary , you can go back
