eggs with avocado smash

  • Ingredients
    1 avocado, pitted
    1 teaspoons apple cider vinegar
    1⁄4 red onion, finely sliced
    lemon juiced, to taste
    sea salt and pepper, to taste
    2 large eggs
    2 whole bread
    Method
    place the avocado in a small bowl, and roughly mashed using a fork. Add the onion, lemon juice, vinegar, salt and pepper to taste and mix well combined.
    To poach the eggs, fill a saucepan with water until 3.2 inch deep. Add the vinegar and bring to the boil over a medium heat, then reduce the heat to a medium-low. Break eggs into the water and cook for 2-3 minutes for a semi-soft yolk. Remove the eggs from water using a slotted spoon and allow to a drain on paper towel.
    Toast the bread to your liking.
    Finally, top whole grain bread with a generous amount of smashed avocado and eggs. Enjoy!
