    Who cares if it took more than 14 minutes for a single video dedicated to French fries? Your videos are never boring and are so entertaining to watch. Very informative and full of useful insight. Thanks a lot for going over the extra mile for us to be able to cook the best fries at home. I'm gonna go and get some potatoes and will try this for myself.
    Edit: I made the fries exactly as you said. Boiling in alkaline water really made the texture better. The potatoes kept their shape and was less mushy. And yes, I fried them and put them in the freezer altogether; they didn't stick to each other. Fried them twice in the morning and got the perfect texture!
    Exterior is really crunchy but it's creamy inside.
    I seasoned them lightly with salt but it's also good on its own. My son was asleep during the morning so he ate his fries around dinner time and they're still crunchy! No way I'll buy frozen fries and fastfood ones which get soggy easily ever again. Thanks for going through the trouble of finding out the the BEST quality of homemade fries for us, Erwan.
    Do you think the same method will work for homemade potato chips?

    Hi Erwan! Hope this helps. 😁 You have 2 categories for the fries. The Fluff and the Crisp. Here's why the boiled first fries were better. Potatoes have starch you're right! So when you boil starch, the molecules "swell up" and absorb water, thus the fluff category. Now the oil dries up the water, then caramelizes it and creates "air pockets" that crisp up the fries

    Hi Erwan, i tried out your method for the fries, i boiled them in alkaline water for 10 min, let them cool down. Then i fried them at low temp for 8 min. then i let them cool down again. Then i put them in the freezer until next day. Took them out of the freezer and fried them at high temperature for around 3 min, and they turned out so so goooooood. Same or maybe even a little better than in the restaurant. But a lot of work ;-) Thx for sharing m8

    I do oil blanching, dunno if that is the right term. Then, I put some cornstarch and freeze it. The cook it again in oil. Just saw from other yt videos.

    Belgium European people loves to eat fries and different kinds of cooking potatoes like mashed potatoes , Crocketten and others because here in Belgium Europe they dont eat much rice...when i cook here at home i like fresh potatoes for fries and easy for me to cook...thanks for sharing watching Belgium Europe here

    this method gave me the best results yet ,i tried making them before but the exterior would always come out leathery, i also tried freezing them after the first fry but it took lot longer to crisp up and made the fries oily in the process, this was the most informative video i could find yet thanks for the video.

    I tried it, boiled with alkaline water for 10min, dried, fried for 15 min at low heat, freeze overnight and refried. The taste was really good. I don't cook often and I even surprised by myself. Thanks ;)

    I will peel, poke holes in my potatoes, cover and microwave them for a couple of minutes until they’re BARELY done, then chop them, straight up fry them, take them out, coat them in a mix of cornstarch, baking soda, and Cajun seasoning and then fry them again and it is FAST and tastes so good 👌

    We do the same technique in the Netherlands! Only, we fry it with sunflower oil or soya oil. And then I use beef broth powder instead of salt. And here we dip it in peanut sauce, mayonaise with chopped onions!

    The ending method that you described is how almost ALL french fries are mass produced in factories.
    I make fries a lot at home. The step that I am going to add is the alkaline boil step... i never considered that part.
    Cut fries in french fry cutter, 7 potatoes 1/4 in.
    Soak in ice water salt bath for 3 hours, about 1/2 cup salt and several cups of ice on top to hold the fries under the water.
    Bring large pot to boil add the baking soda for 4 mins or so. (the step i plan to add)
    Dry off and low temp fry 275 Degrees for 4-5 mins.
    1/2 baking sheet and lay the fries out in a single layer, add parchment and make a second layer.
    place in freezer for overnight and then transfer to a large plastic bag
    When I cook them, i fry them between 4-7 mins, depending on how many i cook in a batch.

    My favorite french fries recipe is Chrissy Teigen’s salt and vinegar fries - basically just add a cup of white vinegar and a generous amount of salt in your boiling water.

    I’m a food scientist graduate and here’s an explanation of fries:
    The higher starch content of the potato, the crispier the exterior and fluffier the interior.
    Cut also matters, the greater the surface area the greater the exterior contact with the oil, thus the crispier the fries.
    For brining process, adding salt to water causes osmosis reaction. Where water moves from low concentration to high concentration. This will help in texture, flavor and moisture retention. At this point you can add additional flavors that you want your fries to incorporate. You can also add vinegar to help with pectin retention.
    Pectin that is present in potatoes helps the potatoes keeps its form while cooking. As for cooking method you can try cold oil method where you start frying your fries in cold oil. Pectin breaks down at 170 degrees Fahrenheit so it keeps the potato intact. Do this is if you want to eat your fries right away after brining.
    The precooking process like boiling allows some sugars to be wash away. Thus reducing the chance of burning. Initial frying after boiling removes moisture and allows the starch granules to go into gelatinization process, this is where you get the fluffy part of the fries. Freezing the potato’s after initial frying will convert leftover water into ice crystals which will then evaporate and convert into steam after the final fry. Which will create a more fluffier interior of the fries. As for final frying, the high heat will cause Millard reaction. Which gives the fries the golden brown color and the the crispy exterior we all want.

      Fun hack as well that food industries do with fried food to make food crispier and retain its crispy texture for a longer period of time is to soak it in citric acid solution.

    I came back after trying erwan’s last method. Boil and cool and cook them and then cool and cook. It’s a long process but it’s worth it :)

    I tried the fries that boiled in alkaline water then fried then freezed! And the result was awesome!!! My friends and my family love it, it taste like MCDO hehe thank you so much erwan 😊🥰

    Waaa just in time, here in Canada they said we have too much supply of potatoes because restaurant/fastfood chains are close they dont order as much potato like before but we have lots in the farms so for sure potato price will go down this month.
