Like any other porridge, like banana etc… As a black culture we are so resourceful! This is the kind of food that have been given to us, how did we get to start eating all the junk that we do today? In Jamaica we use Cassava to make bammy it is almost 1 inch thick 6 to 7 inches round cut it in half to fry it... We eat it with fish or , fish cook-up with veggies 🇯🇲🇯🇲.... I need to know more about cassava because they told cassava is poison it is not cooked long enough... But seeing what happens when my Nigerian ex-boyfriend eat garri I think I know why the discouragement is coming from....

Cassava is harder and more fibrous, so it is more difficult to grind with a pepper or even corn grinder. It is usually grated or cut into flakes to make the grinding process easier. In Brazil, there is cassava flour similar to Gari (there are many different granulations, some are not toasted, others are, some are made without fermentation and others the fermentation is prolonged).
Please am about to set up a garri production factory locally like that in your video. Will love to reach out to you so help me get access to where I could buy those factory machines and set up

Some of us do it that way in Southern Nigeria. The fermentation is necessary to remove toxic cyanide.

Cassava is easy to peel. Just run a line with the knife straight down then just remove the wrap. It's doesn't need knife to peel
