I am learning a lot from you I dropped a pinch of baking soda in my oil before frying my meat as you did in one of your videos and oh it worked like magic. It was "splatterless". Thank you so much now I can fry without wearing faceshield. You saved a girl 😂

Thank you, I really do appreciate your concern. I just want to reassure you that any excess oil you see in some of my recipes do get skimmed off. As you can appreciate, some recipes like our shito require lots of oil to fry and to preserve. I have clearly explained this in most of my recipes and also advised to skim off once done. I believe you are referring to the emergency shito. No, as I mentioned in the video that recipe is inspired by the Chinese chilli oil, the only difference is that I added shrimp and fish powder to mine. The ingredients are supposed to infuse into the oil not to blend and add. You can however blend them and use for your stew or something. Hope it helps. Thanks 🙏🏾
So shito is a condiment and we usually eat it with so many things like boiled white rice, potatoes chips, boiled potato etc. We have some other local foods we usually eat this with such as fried yam, banku, fried rice, kenkey, sweet bread… so many things we enjoy this with.
