Dave and Nick Hello again , I have enjoyed watching another one of your adventures . The smoke issue is the choice of fat lighter , it is great for starting but the amount of resin in the wood is the cause of smoke . If it was just a couple of slivers of resin it would have only burned for a short time and the wood would have turned to coals quickly . But you got this , it is just another lesson learned , which enforces we can't know everything and are constantly learning . That in itself is a good thing . So until your next video I will see you in the next one . I hope your Thanksgiving went well .

That hotel pan is a great score! I also dig the estate sale cookset! I'm surprised you didn't put any holes in the hotel pan for airflow or to attach the pan itself to the trees but i like the setup!

Seriously though, this was a great video... and fun to watch as always 👍 The dynamics between you and Nick are always entertaining. He did seem a bit more feisty in this one (perhaps because someone forgot the pancakes? 😉haha). That was definitely the ultimate outdoor kitchen by the way... pure awesomeness! In regard to the smoke... I don't think there was enough airflow getting down in that deep pan. The smoke by the end of the video didn't have that dark tint to it that resin typically causes... so my guess is just not enough oxygen getting to the fire itself. Just my two cents of course. Anyhow, I hope that you and yours had a very Happy Thanksgiving my Brother!
Lol, man trash is free! Thats why we love it and if we screw up a project we havent lost anything. Im thinking I need a grate in the bottom of the pan. Man, this was cool. A lot of stuff to pack into the woods but it all served you well. I guess I need to start going to estate sales. That pots and pan set was a major score along with the garbage/treasure cook pan. I love bacon, eggs and coffee in the woods. Hardly anything better. You guys are the best remedy for putting up with a world full of crap.

As a retired chef I have a few of those gastro pans. They're usually used in the cookhouse serving section bain maries. I might reuse one like you have but with air holes. Boil over flames, cook over coals. Thank you for the video.
Dave this is your best creation yet. Awesome idea. You see I used to attend large group campouts in the National Forests. Plan on doing so again after I retire with whatever vehicle I can find. Not only is your bicycle table a good hauling cart, but that steam table pan for a grill is awesome. I have seen logs holding up a dirt platform to build a fire on a lot. But your contraption would be faster and easier to set up and tear down two weeks later. Cannot wait until I can retire and hit the woods with my camping buddies. This is so sweet a set up. I just got to find someone to fabricate the bike trailer. You need some air holes punched in the lower sides of the insert pan. It's smoky due to lack of oxygen and it also hindered the transition to coals. You don't want to much oxygen but you need some air holes and possibly a damper set up on it. Just my opinion, which ain't worth a hill of beans, but you might try it. You could cut one rectangle hole in front on the pan and rig a piece of steel for a damper. That way you can regulate the oxygen. You got a shop so it shouldn't be a problem rigging it up. That's what I would do. But that's me. You do you.

My Dad used to go trapping and hunting in the bush north of us, somewhere in the Smith Falls area of Ontario. He taught me a cooking style he called Shentihneha (shanty town style). He fried bacon like you do except that he broke the eggs directly over the bacon and cooked them sunny-side by basting them with bacon grease. It is the best bacon and eggs I've ever had. He also taught me how to make pan bread in the same cast iron Volroth pan. The secret is to cook pan bread on low heat. I still have and use that cast iron pan.

Chris was making coffee when I woke up. He heard the new episode and came running back with two mugs. I asked if he missed me? YES! This room is cold ( I like fresh air at night snd listening to the owls and coyotes..) We bundled back up and I started it over. He says you made enough noise to bring in a revenuer looking for Tickle and his still. My input: You bring some wine and deglaze the burnt bacon for a rue to drip back on the cooked strips. Ananda

Nick’s comments are a wonderful addition; I.e.; “”flag down a plane…”. He made me laugh so hard I almost spit out my coffee1. I was just revisiting this for another idea and then found more JOY.
The resin in the wood probably didn’t help but maybe try drilling a few air holes down the sides of the fire box to maybe help get some air to the fire. My favorite thing about your videos is the relationship you and Nick have he’s really grown up right before our eyes into a fine young man I know you’re proud.
That is exactly the kind of bacon I use, with the butcher`s cut, extra thick. I keep about eight pounds in my freezer and rotate it. Use the grease, after it sets up, to grease your cast iron skillet for cornbread or ho-cake. Any place you would use healthy extra virgin olive oil for cooking, you can use bacon grease and your food will taste better too. Patience is a virtue, and your food will taste better too. One thing is for sure, Dave, you can make a good cup of coffee. I really enjoy watching your videos because they are educational and entertaining. I know they much be a real bear to make, edit and all of the other details involved, that is why I am thankful you are willing to make them.

A great video Dave and Nick, so nice to see a Father and Son spending some quality time together. I really liked the set up, I would possibly add a length of wire with a U bend at each to the rods holding the fire basket, this would hold them tight against the basket JUST in case the rods got knocked and it all ended up on the ground, just a thought. It just makes my day when you drop a video! I cooked my turkey over a fire yesterday, along with roasted carrots and potatoes, Irish bannok bread and a fresh pumpkin and apple tart. As you say, Fun in yhe woods!
Chef Dave finally got himself a dream kitchen, and in stainless steel on top of that! Just amazing stuff! I do believe you need a vent (adjustable and both sides) on the bottom of that fire pit to control smoke and burn. Once you get the grill part going good, then you need a stove top, an oven and a pantry. From there we'll discuss if we prefer 2 or 3 walls and where to hang the boom microphones. To pass inspection you'll also need a second pan like that for a sink. The drainage can legally go straight down so long as there is a sign to not flush chemicals over it. You had me when the stainless steel counter came out and surrounded the fire pit...

Wasn't there something similar you did a few years back that you called a 'swamp grill' or something that was based on a stainless steel mixing bowl with the fire in it and a grill over it? It seems like you had created a small shelf or two that you mounted on trees and used to sit things on while you were cooking. I would say this is the 'go big or go home' version of that.
You have to wear one of those tall chef hats the next time you have an outdoor kitchen set up like that. I`d say this is bordering on glamping. Very fun and funny to watch.
Great video Dave and Nick. Research smokeless fire pit, or diy gasification camp stoves. Buy a couple stainless stock pots and build a raised smokeless cooker.
@@Reallybigmonkey1 I was gonna suggest making it work like a dakota pit, but make the divider a u-shape open at top, welded in, so some water in the U could act as a heat-break to divide the larger burn chamber from inlet. Bonus you get a little washing-up bowl built in too. \ U / \_____/ Basically the water stops heat transfer and stops the inlet turning into a chimney.

That copper clad cookset is awesome! $10???? Crazy, I bet it cost $100 new. I’ve never seen one like it. I scrounge and scrap and save stuff too, have to hide it all from my wife or she gets pissed 😂. The big pan is great! I’m sure you could create adjustable vents you could open or close as needed. Fantastic set up!

Actually our girls did say "that's too much fatwood" but this is The Dave Cooking Show & anything can happen..!! That's what makes the show. We're familiar with the Condor machete, think it was designed by Joe Flowers, another legend. But that knife around your neck do look like a Helle or might be a custom.? We would also like to know, besides the camera what is Nick's carry when he's in the woods with you. Oh no....the kitchen's on fire..! Always find direction of the wind before making a fire, we learnt that from you matey. Yellow jackets.? is that the same as Crackerjacks.? May we suggest some holes on the side of the "trash pan" approximately couple of inches from its base, so more air can get suck in thus less smoke.? Its always more fun with Nick along! Nope, that is not a Condor, its a Kabar Cutlass machete. Kabar is a long time American company. My neck knife is a Casstrom Forest knife, made in the same country as a Helle. I am trying to avoid holes in the pan so Im not dropping ashes everywhere. But, I do need airflow so Im thinking maybe a grate in the pan to hold the wood up a little and add air flow under it? We did have a very Happy Thanksgiving, we ate like hogs! Thanks for watching

Here’s a suggestion you may like… we put our potatoes, skin on, right on the side of the hottest part when we started the fire in the grill. (We used firewood in the grill 😂). The potatoes cooked right from the start, ready about when everything else came off (or we put meat on as the potatoes finished). The skin would be black but wonderful inside:) Bon appetite! ~~~Rambooo

Converting the bike cart into a table was a great way to extend your resources. Perhaps it could also be converted to a fold out cot after dinner is done. Placing a pan of water on the cook surface to act as a level would give you an indication of how even the top is before the fire is started. An uneven frying pan is a cause of great distress when you have multiple things to keep an eye on.

He fried bacon like you do except that he broke the eggs directly over the bacon and cooked them sunny-side by basting them with bacon grease. It is the best bacon and eggs I've ever had. He also taught me how to make pan bread in the same cast iron Volroth pan. The secret is to cook pan bread on low heat. I still have and use that cast iron pan.

The resin in the wood probably didn’t help but maybe try drilling a few air holes down the sides of the fire box to maybe help get some air to the fire. My favorite thing about your videos is the relationship you and Nick have he’s really grown up right before our eyes into a fine young man I know you’re proud.

That is exactly the kind of bacon I use, with the butcher`s cut, extra thick. I keep about eight pounds in my freezer and rotate it. Use the grease, after it sets up, to grease your cast iron skillet for cornbread or ho-cake. Any place you would use healthy extra virgin olive oil for cooking, you can use bacon grease and your food will taste better too. Patience is a virtue, and your food will taste better too. One thing is for sure, Dave, you can make a good cup of coffee. I really enjoy watching your videos because they are educational and entertaining. I know they much be a real bear to make, edit and all of the other details involved, that is why I am thankful you are willing to make them.

I really liked the set up, I would possibly add a length of wire with a U bend at each to the rods holding the fire basket, this would hold them tight against the basket JUST in case the rods got knocked and it all ended up on the ground, just a thought. All the best from England

Chef Dave finally got himself a dream kitchen, and in stainless steel on top of that!
Just amazing stuff! I do believe you need a vent (adjustable and both sides) on the bottom of that fire pit to control smoke and burn.
Once you get the grill part going good, then you need a stove top, an oven and a pantry. From there we'll discuss if we prefer 2 or 3 walls and where to hang the boom microphones.
To pass inspection you'll also need a second pan like that for a sink. The drainage can legally go straight down so long as there is a sign to not flush chemicals over it.
You had me when the stainless steel counter came out and surrounded the fire pit...

Wasn't there something similar you did a few years back that you called a 'swamp grill' or something that was based on a stainless steel mixing bowl with the fire in it and a grill over it? It seems like you had created a small shelf or two that you mounted on trees and used to sit things on while you were cooking. I would say this is the 'go big or go home' version of that.

Great video Dave and Nick. Research smokeless fire pit, or diy gasification camp stoves. Buy a couple stainless stock pots and build a raised smokeless cooker.

@@Reallybigmonkey1 I was gonna suggest making it work like a dakota pit, but make the divider a u-shape open at top, welded in, so some water in the U could act as a heat-break to divide the larger burn chamber from inlet. Bonus you get a little washing-up bowl built in too.

Basically the water stops heat transfer and stops the inlet turning into a chimney.

That copper clad cookset is awesome! $10???? Crazy, I bet it cost $100 new. I’ve never seen one like it. I scrounge and scrap and save stuff too, have to hide it all from my wife or she gets pissed 😂. The big pan is great! I’m sure you could create adjustable vents you could open or close as needed. Actually our girls did say "that's too much fatwood" but this is The Dave Cooking Show & anything can happen..!! That's what makes the show. We're familiar with the Condor machete, think it was designed by Joe Flowers, another legend. But that knife around your neck do look like a Helle or might be a custom.? We would also like to know, besides the camera what is Nick's carry when he's in the woods with you. Oh no....the kitchen's on fire..! Always find direction of the wind before making a fire, we learnt that from you matey. Yellow jackets.? is that the same as Crackerjacks.? May we suggest some holes on the side of the "trash pan" approximately couple of inches from its base, so more air can get suck in thus less smoke.? Its always more fun with Nick along! Nope, that is not a Condor, its a Kabar Cutlass machete. Kabar is a long time American company. My neck knife is a Casstrom Forest knife, made in the same country as a Helle. I am trying to avoid holes in the pan so Im not dropping ashes everywhere. But, I do need airflow so Im thinking maybe a grate in the pan to hold the wood up a little and add air flow under it? We did have a very Happy Thanksgiving, we ate like hogs! Thanks for watching

We would tailgate on the beaches of SoCal. Here’s a suggestion you may like… we put our potatoes, skin on, right on the side of the hottest part when we started the fire in the grill. (We used firewood in the grill 😂). The potatoes cooked right from the start, ready about when everything else came off (or we put meat on as the potatoes finished). The skin would be black but wonderful inside:)

Converting the bike cart into a table was a great way to extend your resources. Perhaps it could also be converted to a fold out cot after dinner is done. Placing a pan of water on the cook surface to act as a level would give you an indication of how even the top is before the fire is started. An uneven frying pan is a cause of great distress when you have multiple things to keep an eye on.
