One thing regarding fitness is that they live at high altitude so their physiology is different to ours. Larger hearts, greater lung capacity etc which would affect fitness and bioenergetics etc. Not my area of expertise, but this is why Sherpas can climb Everest etc without oxygen.

Gurkhas are hardcore, I remember seeing them at Catterick and they were immense.
