    Excellent tutorial. Thanks. I like the idea of putting the salt in the water and leaving the dough overnight. I will definitely try this recipe.

    SKN Massive! I usually make Johnny cakes without measurements...most of the island dishes I make are without measurements...nothing wrong with that. That is actually the right way to do it. :-)

      My grandmother didn't show me using measurements either lol. But I understand for someone trying to learn and make it that's why I did my best to share.

    What kind of flour are you using self rising or all purpose.? Also, do you need to use milk. Can you omit milk or substitute it..?

      I used all purpose flour for this. Also yes! You can omit the milk and just use the salted water 😊

    Thanks for sharing. How long to fry each side, and can baking soda replace the baking power or can one use less baking power?

      I would say medium heat for about 5 minutes on each side. Until they get golden brown.
      You also don't want the heat too high because the outside would cook too fast and the middle would be raw.
      Also, I've never tried it with baking soda so not to sure. It couldn't hurt, I would just let it rest first

    Something went wrong on my making this....to salty with 2 tablespoon,and dough was hard to roll out. I eat these cakes at st kitt while on a cruise,,really like the chicken or fish on them like a sandwich. They were touch of sweet. I did use cold flour and refrigerator crock butter..can u help

      Hi Pat, happy to hear you liked the Johnny Cakes on your visit!
      It definitely should not be too salty thou. It should be 2 tbsp baking powder and
      1/2 tsp salt. Maybe you mixed up those 2 ingredients?
      As for the dough being hard, how long did you let it rest for before frying?
      You should always let the dough rest, while covered, for at least 30 mins so the baking powder can get the dough nice and soft.

    The first part looks just like the way Bojangles makes biscuits in North Carolina.
    They use shortening instead of butter.
    If you folded a few times and baked these in the oven, you'd have great biscuits!

    When you add the salt to the water and the flour doesn't take all the water, then the dough will lack salt, so I prefer to add salt straight to the flour

      I did not use coconut for this but you can add it with the dry ingredients.

      You definitely can add sugar! I've had a few sweet ones but I think those would be considered "festival" or "bakes" instead of Johnny Cake.
