I've been cooking and experimenting with Carbquik for a few years now. I tried adding eggs, other things to keep it from being crumbly. The solution is to add a little Xanthan Gum. Just that simple. For a few biscuits, a 1/4-1/3 tsp of Xanthan gum is plenty. Add a dash of salt. Mix it well. Cut in some cold butter. Then a little milk, and you have biscuits. I've also make a pretty decent banana nut bread with the Xantham Gum, about 1/2 tsp, really holding it together well. Sometimes Carbquik can have an odd taste. I have found that it is related to cooking temp. Don't cook higher than 370*F. Just cook it longer.

Just made awesome "Sausage Balls" using CarbQuik and I'm sold. I used 2 cups CQ; 1 lb uncooked breakfast sausage; 3 cups grated cheddar; 1 cup grated mozzarella cheese; 2 eggs; 1/4 cup heavy whipping cream; 2 tbs Italian seasoning; 1 tbs garlic. Roll into balls on parchment & bake 350 20-30 min till a crispy golden brown (time depends on ball size) served with mayo/mustard sauce on the side. Big hit at my place. Filling too. Warms up in micro and won't loose it's crunch.

I follow several Keto/Low carb channels and your by far is my favorite! I love your honesty! Thank you for testing these low carb options. I bought Carb quick, made the biscuits, rolled my eyes at them and then promptly chucked the box in the trash. Being from the south, I just could not deal with that being the be all of biscuits for the rest of my life. I wish I had your video before I did so. I actually prefer Kristi's biscuits from cooking Keto with Kristi. We need to pitch your show to Food Network or The Cooking Channel!

I've used this for years, and I think it's an acceptable substitute for a lot of things. "Sandy" is a good description of it sometimes. I've used it as a coating for fried chicken and shrimp (not quite as crispy as flour), made sausage gravy, used it as a binder for salmon patties and meatloaf, made an okay pizza crust, a pretty good cornbread, and the cheddar cheese biscuits are better than the regular biscuit recipe. It makes a decent alternative for a lot of things.

Years back when the Atkins diet was the rage, I tried Carbquick. I never quite liked it. But recently I saw a chicken and dumpling recipe by PaPa G and it looked great. There was gravy in it. I like gravy. Then your video came up, and watching you gave me a number of ideas on how to use this product. This recipe is just the basics. Add some other seasonings to it and some more butter. Since I'm not gluten free, even though being on a low carb diet eliminates flour, I'm not one that would care if occasionally I eat a little gluten.
I've been eating lowcarb since this summer. I recently had blood work done because I am a diabetic. My A1c is now at 6. That's down from 7.8. Before that it was way up there. That's why I was prescribed Metformin. My doctor discontinue my meds to control my sugar...warning me not to deviate from my diet. My cholesterol is normal now, down from 220. My blood pressure is way down. I've never followed keto or paleo rules. I just kept the carbs down. To tell you the truth I don't know how many carbs a day I consume. I just eat protein, lowcarb vegetables, salads, low carb tortillas and lowcarb breads that I make. I do consume Atkins products...shakes, their bar treats and some of their candy. This makes it easier for me to stick with the lifestyle. I use crushed pork skins mixed with almond flour and butter to make crisp toppings...stuff like that. Weight loss is slow but ongoing. So, this is just my opinion, but I think all those rules make this lifestyle a little difficult and too rigid. I welcome recipes that teach us to consider limited carb consumtion as the real mechanism to this lifestyle. Carbquick isn't going to kill you if you aren't gluten intolerant. So why not use it without the guilt some feel simply because someone deemed this products outside of the keto or paleo rules. Anyway...it's just my opinion.

I love Carbquik pancakes! The garlic cheesy biscuits are great too! I've used Carbquik for years! There are tricks - moisture is an issue. Sometimes more water or heavy cream is needed. Pancake batter is thick!! like Hungry Jack. Don't overwork it - because of the protein it will toughen up! Oh there are recipes on the inside of the box just like Bisquik. More recipes are on their website too. Carbquik has been used in hospitals, nursing homes etc for years. They get it in 25-50lb drums. I also use it in breading with crushed pork rinds. I wish I could upload pics of things I've made with Carbquik. I use Torani Sugar Free Pancake syrup with pancakes. I make a sausage gravy over Carbquik biscuits.

I just found your channel a few days ago and have BINGED all your videos lol! You are very inspiring and quite helpful, and for that I want to THANK YOU! I've lived low carb off and on for many many years (I know you can relate darlin'!) Everytime I return to a more keto lifestyle, I get more and more intimidated. If I follow too many folks, I get too many inputs and am basically told if I can't or won't buy top of the line then I can't do it. Sorry, single mom here and my budget is TIGHTER than my old jeans! What I like about you, is you are open minded, you are realistic, and you are so relate able. I'm still scared to eat veggies and such because I've been brain washed to ONLY EAT HIGH FAT items and with my macros hitting 112g fat 45g protein and 17g fat … I can't afford a serving of veggies unless they are tucked in a stick of butter lol! But, watching you go through your REAL LIFE journey is helping me realize that food shouldn't be scary. THANK YOU THANK YOU THANK YOU

Mrs. H.H.: My version is more of a casserole than a pie. It’s melted butter, chicken broth, heavy whipping cream, cheese, steamed broccoli, (and/or cauliflower) and cooked cut up chicken and black pepper. The topping is a mixture of mashed pork skins and a few French Fried Onions. I cook at 350 for about 25-30 minutes. It’s delicious!

I found the same recipe on Carbquik website and it said 6 servings, not 10. So even if you make it four, that's only about 4g carbs per serving. I have not yet tried this recipe, but I used the onion cheesebread recipe as an accompaniment to chili (rather than cornbread), and my husband loved it! Said I could make it anytime. When I make the pot pie, I will definitely use more herbs and spices.

As always, thanks for the great video!
I really do not care about being keto strict as long as it doesn't make my blood sugar jump.
I use CarbQuick to make a dark roux when I make crawfish etouffee and it comes out great!
CarbQuick may work better when mixing it with numerous other ingredients.
Nobody enjoys listening to "Dueling Tuba's", but a tuba is a great part of a full orchestra!
So it may help when you can add other ingredients that give it a different taste or texture like adding allulose, gluten, cheese, garlic, yeast, Italian seasoning, etc.

I bought carbquik when my DH was put on a nearly 0 carb diet by his doctor. The drop biscuits are nasty. If you go to the webside they suggest rolled/cutout biscuits. We love them. You use 2 cups of the Carbquik, 1/2 cup heavy cream, 1/8 c. water. Mix them in a mixer until crumbly. Dump the mess out onto a cutting board and knead it until it forms dough. Pat it out and either cut it into 6 biscuits or use a biscuit cutter. Bake 20 minutes in a 350 degree oven. Yum.

I looked at the directions, and decided to improvise. I never could get an exact recipe from my mom cause she just threw stuff together.... I made biscuits for the first time today from carbquik. I didnt even measure. I put a medium sized bowl of carbquik poured milk and put an egg in it. Mixed it to a stiff batter. Put dry carbquik on the counter to keep it from sticking and turned the mixture out on it and kneaded it. I dont do drop biscuits. I patted it out and cut big biscuits out of it. They took longer than 10 minutes.... maybe even 20 or 30 on 350 and put some butter on them and they were good. I didnt like them as much as traditional southern biscuits.... which my mom taught me how to make but they were good. Also you can make your biscuits any size you want just keep an eye on them in the oven. When they are a little firm to the touch and a little brown on top they are done.

Thank you for doing this. I recently purchased a box. Last night we had taco pie with it. The recipe was not from the website or box. I found it on the Internet. We liked it. I added a 1/2 cup of the Carbquik to recipe and glad I did. Seemed too runny. So, 1 cup liquid to 1 cup Carbquik for the Bisquik copy cat of impossible pies. What you made looks better. Also, a YT channel playing with Carbquik says let it rest for about 1/2 hour when making things like biscuits. The "dough" becomes more like consistency of traditional biscuits.
I'm using it for those times when I would otherwise cheat with something silly like refrigerator biscuits my husband and grandkids like. Breading is something I use with eggplant and zucchini so I'll try it there with addition of grated parm. I do a couple pulses in food processor of chaffles when I've made extra and use as breading also with the addition of grated parm. I look at Carbquik as being comfort food.
I definitely won't part from my regular keto foods I've lived with for years.

I made the carbquick pancake recipe this morning and like you said the serving size is ridulous. Recipe said ten servings of two pancakes each but only made ten 4-5" thin pancakes. They browned exactly like regular pancakes but were very light and very fragile. Taste was acceptable but very light compared to a denser regular pancake. I'm type 2 diabetic so was concerned about my blood sugar levels so I tested two hours after eating and my glucose was 85. Right where it should be.

the thing with carbquick is it is a great option versus the alternative high carb options. other thing is the textures are great but need to add flavor, like salt or garlic powder

Thing I noticed about Carbquik is that when it is fresh out of the oven it is tolerable(still has nasty aftertaste) but when it cools down you might as well throw it away. I use it mainly for its breading recipe which is actually pretty good.

If you mill the carb quick in the food processor for 5 minutes prior to mixing in all other ingredients, you’ll find the biscuit dough is easier to work with and it would be less griddy 🙂

I just got Carbquik and the first thing I made was the Bisquick classic coffee cake recipe but changed The ingredients to Swerve, Surkin Gold and added to the dough 1 tsp of LorAnn Buttery Sweet Dough emulsion. That last addition made all the difference. It was delicious and froze well. I’m doing low carb not strict keto. It’s great to get ideas from creative cooks so please play with Carbquik and share. I ordered a whole bunch of flavor extracts from Amazon to create too.

I took your note about dry and crumbly and did the drop biscuits. I added an egg to 2/3 cup of carb quick (I just wanted a few biscuits. Added almond milk. Worked great! I need to work on what gives the best rise ( do I need a little more baking powder, a little more flour, I’ll try yeast at some point). Great for when I want an egg and cheese biscuit. Gravy is next.

It's not something we use often, but really it's the best we've found for pancakes to actually taste like pancakes. The pre-packaged almond flour based pancake mix(the name escapes me right now) tastes fine, but the texture isn't there. IMO it needs a little more leavener, and definitely needs some vanilla or cinnamon, or something.
For biscuits tho, we found a recipe that uses a mix of almond and coconut flour to replicate Red Lobster's biscuits that we can't tell the difference.
[EDIT]: Also, that restaurant size is the only size we can find in our area, and we can ONLY find it at Wally World. Nobody else carries it, and the price to order online is inflated to account for shipping.

Now I would like to see your own potpie recipe. I am doing keto for weight loss, altho I am loving the mental clarity and mood stability, so I dont mind the wheat part. I have found that vital wheat gluten is really useful to *crispy stuff up* when frying. Not much is needed - just a dusting but it def makes it (ie. wings) tastier. Am going to experiment with a keto bread product today and see what I get. Hardest part will be figuring Macros which I have not done before. Also i commented below about this but we are collectively serious that you could take this to a network. Absolute natural in front of your camera

Highfalutin' Low Carb - do you regularly use your glucometer? Your vid on the sweeteners was really interesting and I would love to get a tester but at $90 am not sure its a worthwhile tool - thoughts (anyone)? I am curious if my sugars go up after dry white wine or vodka with seltzer in particular

    • @HighfalutinLowCarb
      @HighfalutinLowCarb  7 ปีที่แล้ว

+Banjojo I don't use it regularly, mostly when I try a new product or if I'm suspicious of something. I know other folks have recommended a glucose meter called ReliOn, sold at WalMart. It's like $15, and the strips are more affordable as well. Might want to check into that one.

Part of the problem is that the carbquik recipes don't have enough liquid. Like with the biscuits. I am a seasoned cook, so I know what the consistency should be. I probably add at least ½ a cup more liquid than the recipe calls for. My biscuits turned out beautifully.

  • @cmwhite2421

A lot of people are afraid of Carbquik. As somebody who used to bulk and cut all the time (so I purposely yo-yo dieted all the time...), I would recommend that if you're actively trying to lose weight, it's best to avoid or just use it for a minimal-impact cheat meal (Carbquik brownies, pancakes, pot pie etc). But if you're at a point where you're just trying to maintain your weight, it's perfectly fine. It is a very processed food, so I wouldn't eat it everyday though.
That said, I sill think fathead dough is way better.

My husband recently discovered your channel and we are enjoying it very much. I'm no fan of CarbQuick because of the wheat, but you aren't being fair to them regarding serving size. They aren't manipulating the serving size to get 2g net carbs. The serving size is 32g. If you look at wheat flour the serving size is right around that. So they are using a standard serving size on the nutrition panel.
Now, whether that is an average or reasonable serving is a different matter. The new nutrition guidelines that are coming out call for companies to change their nutrition data panels to better reflect what people actually eat. Think on the fact that a standard serving of pasta is 2oz dry. Most adults are going to eat 2-4 times that amount, depending on what else they are eating with their spaghetti.

In my experience with Carbquik, it is far better flavored than plain. The drop biscuits are rather blah. They also definitely underestimate serving size. I've used it as a quick and dirty thickener/binder for the times I just throw proteins and veggies into a pan and cook it up, and that works very nicely.

I agree, I've used Carbquik for basic biscuits and it's kind of bland, the cheddar bay version is pretty darn good and I used it for mini blueberry muffins and loved it. I liked the cream cheese & egg pancakes over Carbquik batter, but it works in a pinch. I'd be interested to see the results of blood sugar testing, as that seems to be one of the biggest complaints against using Carbquik.

Wes i know you won't see this comment bc this video is 3 years old. But I have a pro tip. When I make carbquick. I had 2 tablespoons of melted butter and I do whatever the water amount is. I do that much in heavy cream. And then I still add about that much water. Maybe less. The biscuits don't come out dry and they essentially double the amount of biscuits without the carbs. If that makes sense. They did a terrible job with the instructions. If you make them as they say on the side they come out small and dry. I honestly don't even measure. I eyeball. I makes sure the "dough" is quite moist.
Try it next time. I promise you will like it better. Same for topping on stuff like this chicken pie
