Tbh, you can already do this for much, much, much cheaper, just connect any keyboard to a daw thru midi, or synthesia, or whatever visualizer / game you want. You don't need a fancy touchscreen. Hell, we have been doing this for over 20 years at least. There are some really nice midi keyboards with aftertouch, light up keys, and so on.
