They are the KING of sensor, but remember, what software you use for that sensor is another story. It's like I can teach you how to bake a cake, but I'm not going to give you secret recipe lol. :)
Sony make the sensor so of course, they know how to utilize their their products to make the best of it. Just look at their Sony Alpha Camera line. They are #1. Canon and Nikon is now fighting so hard to get back their place where they were before.
Watching this on my iPhone XS Max and I agree with most of the comments here, the XZ3 has the better camera. XZ3 has more natural output. Bravo Sony, they should rethink how they market their products. Here in Switzerland, Apple products have a big market share, like 60%.
Sony's marketing is like Zero. They do have great phones though.

That's given. If I'm Sony, I might sell you the sensor but I'm not going to tell you how to make your camera better.
Sony uses a customized sensor for their phones. They don't sell what they use until they developed a new one. In a sense, it's like their last gen sensor sold to the latest phones of competitors. Though they somehow get beaten in the software department at times since the camera division doesn't want to cooperate till the Xperia 1. We'll know how huge is the improvement then once they release it.

i am using xperia XZ2 compact which has the same sensor with XZ3. can say pictures and video quality have improved much after upgrading to Android 9 Pie. Looks like they did a good job on fixing their camera app)
iPhone won on some points but the automode in low light and stabilization wrapped it up. XZ3 is better.

The difference in stabilization is so drastic, the iPhone looks as if it went against the GoPro Hero 7.

I'm not a fan of Iphone but it won the xz3 by many area and margin: natural color, cinematic video texture, fast auto focus, contrast control, natural skin tone, audio loud and clean.
As I'm seeing there iPhone as bright quality in Sony realer life quality

listened to the audio very well and it looked like one of the mics in the xz3 was covered. The stereo recording sound was not balanced if you listen with an earphone

Watching from my Xperia z3 still pleased with it
The iPhone still does great dynamic range and shoots with a flatter looking profile. Sony tends towards better colours.
The bike test seems to upset a few phones. In reality, both of these are fine with hand held usage.
Make sure the setting for sony microphone is on high because it normally set to auto which will tune the audio a lot when hearing loud sound

@@阿豪-m3n Sony 4K Display+HDR+OLED+TRILUMINUS. The only one who has Recording in 4K+HDR and the only one who has 1080'p in 960 FPS.
Both have splendid cam! I'd say iPhone's front facing cam is better, while Sony did a better job for the rear. But all in all, both are great. Nothing could go wrong with both of these devices.
