  • Geoduck is the most delicious clam in the world. Sweet and briny, its distinct flavor will transport you to the Pacific Northwest coast. Take a bite, close your eyes… can you smell that saltwater breeze?
    On the first video I showed you how to clean this daunting giant clam. In this second video I teach you how to slice it and serve it raw over ice, my favorite way of eating raw fresh seafood.

    I still remember the first time I had geoduck in 1996 and it was served as sashimi. I was blown away and still remains my favourite shellfish sashimi to this day. Thanks for the video Andrew, you rock!

    It's been a long time that I have watched your show and learned so many things. I loved it when I found out you also collected pocket knives. I always noticed you knives on bizarre foods. Thank you for the information and the entertainment. After drifting from one boring job to another I became a cook 7 years ago. I love what I do now and I think you helped that happen. Thanks.

    I remember the contraction test on his tv show years ago in the New York episode with an octopus tentacle. Keep doing what you do AZ. You got e trying foods that I wouldn’t expect myself to eat. Even as a professional 👍🏾💯

    We blanch those slices for a minute or less in boiling water, then eat it with a ginger scallion dipping sauce. Same as the dipping sauce eaten for Cantonese style poached chicken. The best!
