Little tip: probes are great but they can also cook your meat faster due to the heating of the metal probe. There’s no reason to have one in the first 8 hours it’s only to let you know of the stall and when it’s done. Carry over is usually 8-10 degrees.
I prefer to season both sides of the brisket. Smoke it at 225 degrees for about 6-8 hrs uncovered. Then wrap it in Traeger paper and smoke again for another 5-7hrs at same degree. Comes out so great!
@allisonfey1 It's because the brisket is being cooked by smoke and not fire like regular steak. Plus brisket is pretty big with thickness of meat and fat so it'll take time to cook.
