- Canarian cuisine has several features that can't be found anywhere else in the world. For example, gofio flour, which is made from roasted grains and added to a wide variety of dishes, from ice cream to stews. Or the green and red mojo sauces that are commonly served with potatoes. As a stopover for Spanish sailors on their way to their colonies, the Canary Islands also became a melting pot for influences from the mainland and Latin America. We set out on a culinary expedition to discover more.
