  • Today I am sharing an easy traditional Cornish pasty recipe with you. These pasties are so versatile and easy to make into veggie pasties or different meat pasties too!
    INGREDIENTS (to make 6 pasties)
    2 sirloin steaks
    2 potatoes
    1 swede
    1 onion
    GENEROUS salt & pepper
    PASTRY (shop bought short crest or puff is perfect too)
    500g flour
    150g butter
    pinch salt
    5tbsp water

    I always use skirt when I make pasties, pastry with half butter and half lard. Like my veg sliced rather than diced and a few nubs of butter or Cornish clotted cream to give a bit of gravy. Crimping is also required. Plenty of salt and pepper makes a proper job pasty.

    Hey Kerry these look wonderful so glad you are giving out this recipe I am cornish and grew up on a pastie .this isn’t a traditional recipe but it doesn’t matter in the grand scheme of things so much better for people to cook these and give fresh made food to the family than taken to a burger joint .please ignore the whingers .they have nothing better to do than complain .looks lovely food !! As do all your recipes keep them coming

      Totally agree. I'm Cornish too. I leave out the turnip and always use beef skirt or chuck steak. My granny would tell me off if I didn't crimp proper! Looks tasty and I can almost smell them from here!! P.S. leave some fat on the meat as it helps make some yummy juices. I also put a knob of butter inside before I crimp. Nom nom nom.

    A pasty needs chipped potatoes and Swede... and a proper crimp.... crimping is the finishing touch!! Meat has to be skirt or chuck for best flavour

    Veggies should be chipped (small pieces about 1cm x 1cm x 3mm), not diced. Beef should be (a) skirt, not sirloin (b) small dice (no more than 1.5 cm cubes). No vent holes - need to keep steam in to make the gravy (add a dollop of clotted cream to assist with the gravy). Needs plenty of seasoning, too.

    Hi Kerry …. Your right they are easy and delicious. With a small knob of butter inside too makes it more juicy, I was told that by my cornish friends .

    Cor blimey missus that was good. You sure did the business with those pasties. They're similar to Jamaican patties. But Jamaican patties are smaller. Top 1 for that anyway sharing your recipe

    Funny watching this. I live in Cornwall. The original Cornish pasty was made with skirt as it was cheap.

    Hi kerry great video instead of making your own pastry could you use the ready roll pastry if so would it be puff pastry or short crust also buying the ferry roll pastry would that effect the thickness of it thanks have a lovely sunday

      Yes shop bought is perfect and I use both puff or short crust.. whatever they have on the shelf! Saves you making the patty yourself and tastes just as delicious :) xxx

    You don't mix it all together, the veg is thin sliced the meat is Skirt or Chuck and its layered potato first then Turnip, onion and last rhe meat to make the gravy with a knob of butter or Clotted cream on top.
    15 mins before the end of cooking pour a deserts spoon.full of water in the vent hole.

    Using the fork to seal the pastry edge you risk getting an "Apache Pasty". That's a pasty with a pastry patch here and a patch there. :)

    So much is posted online about rutabaga and cornish parties.
    Rutabaga would rot even when frozen, it has a bad stink...

    Buy a cheaper cut of meat and tenderise it first. Skirt is the original choice and flavoursome.

    No steak in a real Cornish pasty! It's Skirt of beef,nice & tender,also you do not mix the vegetables together that's the Devonshire way! You layer the veg starting with the potato,then swede,add onion & meat on top with a knob of butter to make the gravy also salt & pepper.some put parsley on top!

    No! You’ve not a clue. Cornish pasty is made with beef skirt only, not sirloin steak, pastry is strong flour with lard. The pastry is crimped by hand, you do not put vent holes in, the ingredients need to steam. You can call these pasties if you want, but you cannot call them Cornish Pasties.

      Totally agree Skirt and hand crimping needed. Think this is a traditional ginsters recreation. Also don't vent. Put in hotter for 20mins then let them soak at a lower temp

      I well know that the Cornish pasty has protected status as my family cornish born and bred with authentic recipe, BUT having a bakery business in Somerset.is only able to call their product pasty .prior to the ruling it was always a Cornish pasty .Cornish lorry drivers always knew where to get the real thing whilst coming up or down the M5….the lady making these said she was putting in turnip tho that did look a wee bit orange .!! She didn’t say carrot !! But swede is defo in the Cornish pasty .my grandma who died in the 60s always put in swede and yes skirt beef .maybe not allowed to call the thing Cornish but lovely for people to see Kerry making a delish meal in a crust for modern families,and so much better than a ginsters the garage what’s in a name ?

      I would add crimping is an acquired skill ,a fork does the job .life is too short for petty arguments .well done Kerry regardless ..

    I would so leave the steak fat on as that is where all the flavour is !

      I leave the fat running through the middle of the steak but there was quite a bit on the sides of these steaks so I always remove that :) xxx

    Can't see what you're doing most of the time. Put your camera down a bit.
    Using a fork is not the way to seal a Cornish pasty.

    That is definitely not a traditional Cornish pastie never is there carrot in them or steak it's always skirt beef onion swede or turnip but Cornish you swede IE yellow turnip and potatoes I'm Cornish and never seen a pastie ever made like that do your homework love

      Yes, but on your video - oh wait, neither you nor I have taken the trouble to share any content. Promise me that you'll raise your issues with your psychiatrist because I care about you, ACP. Be sure to tell him/her that the lady clearly states that it's her own recipe and that you've posted a dozen negative comments. Constructive feedback? Love that. Being a half-wit? Not so much. I used this recipe and fed the results to 500,000 people, all of whom have lived in Cornwall from birth. They said it was the greatest Cornish pasty ever, but hey, I'm sure you're right and everyone else is wrong. Happy now?
