How to Make No Chill Roll-Out Cookies

    Here's a delicious roll-out cookie dough recipe that's perfect for making cut-out cookies of all shapes and sizes. The best part, no chilling required which is a huge time saver! This no chill sugar cookie recipe can easily be customized with your choice of fun colorful sprinkles or shades of royal icing.
    INGREDIENTS
    - 1 1/2 teaspoons vanilla extract
    - 1/2 teaspoon no-color almond extract
    - 1 cup (2 sticks) unsalted butter, (softened)
    - 1 1/2 cups granulated sugar
    - 1 egg
    - 2 3/4 cups all-purpose flour
    - 1 teaspoon baking powder
    - 1 teaspoon salt
    DIRECTIONS
    Step 1
    Preheat oven to 350ºF.
    Step 2
    In large bowl, beat butter and sugar with electric mixer until light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition. Do not chill dough. Divide dough into 2 balls.
    Step 3
    On floured surface, roll each ball into a circle approximately 12 in. diameter x 1/8 in. thick. Dip cookie cutter in flour before each use. Bake cookies on ungreased cookie sheet 8-11 minutes or until cookies are lightly browned.

    I had never baked cookies in my life, but today I made these, and they were delicious. I did have to chill the dough for about an hour, but that's because I live in Panama and it's incredibly hot and humid here. I can now add "bake Christmas cookies" to the list of things I've done in my life. Thank you for this great, easy-to-follow recipe.

    This is my go-to. Perfect.
    Sometimes I have to chill it a bit but it doesn't matter to me. They are perfect. They hold their shape AND size perfectly.

    I used a similar recipe but it called for 3 eggs and 4 cups flour. I did chill it even though it also said she didn't. Other differences were 4 tsp baking powder and 1/2 tsp salt. It worked great. I rolled out between parchment paper then you don't have to keep adding flour to make it not stick and the dough doesn't get tough.

      I also thought the same with the parchment paper, it would seem to me that the cookie would get too dry with so much flour after a while. But hey, to each to own cookie I suppose lol

    This is the best recipe ever!! I need to make this way more often. When I usually don't have to chill the dough the cookies taste tasteless. But when I want a delicious recipe I have to chill it forever. But this recipe is both delicious and no chill. Thks SM

    I tried this and they did not retain the shape although the flavour is beeeautiful! and the consistency... amazing. I put them in the refrigerator for 30 min and it retained the shape better

    Just tried it and it came out fantastic! I halved the recipe and still used the full egg as I didnt want to 1/2 an egg. Other than that I followed the recipe as is. I also think we should follow her recipe and not overmix the dough. Very pleased and will use this for my regular xmas cookie recipe

    This tutorial is sooo helpful I am become a cake decorator as a career and I am excited but love this recipe because I baked cookie tonight to decorate with royal icing and it all combined because I didn’t have didn’t have a lot of flour so I used confectioners sugar but before I put it in chill dough but it’s just got more sticky ugh lol

    Just tried this recipe and it did not work for me at all. The cookies taste great, but the cookies spread so bad for me. I followed the recipe exactly so not sure what happened. Looks like it works for most people.

      I am having the same problem with them spreading. I have no idea what it is that I've done differently, but they spread so bad. I feel like the very first time I tried this recipe, they didn't spread and now they do 😩 everyone loves the recipe though

      ❤😎Tip from my grandma: Have you checked your barometer? Sometimes I add an extra 1 or 2 Tbs more flour, depending on how humid it is. 🙄 maybe this will help you out?

    Can you freeze the cookies after baking and before icing

      Mary Vanhouten yes! I freeze my cookies in freezer bags and then in an airtight container. Pull them out when ready to use and let them sit about an hour before decorating. I also do the same for my decorated cookies. They come out Perfect!

    We use self rising flour in a lot of our baking. Do we HAVE 2 use all purpose flour or do we have 2 eliminate an ingredient? I love baking a lot, but have enough money, time or utensils 2 do it as much as I want 2. Y'all are 1 of my favorite recipe/cooking supply people and y'all rock. LOL.

      Charlotte Manasco I only buy self rising and I don’t add salt or baking powders. My cookies, I have been told a lot of times, are amazing! They bake beautiful! Flat and don’t spread like I need them to decorate.

    Odd questions, does melting butter affect how the cookies will turn out?

      yes, you do not want to melt butter for any sugar cookie, if the butter is too soft the cookies normally spread. Room temp to slightly cold will make the best cookies. Plus you want to make sure your butter and sugars cream ( get fluffy and turn a shade lighter after whipping ), You can not get that same fluff if you use melted butter. Hope this helps.

    One question though, I want to make the chocolate ones and it says 3 squares of unsweetened chocolate and I was wondering how many chocolate chips that would be? Also I was wondering if I substituted unsweetened chocolate chips for semisweet chocolate chips how much sugar should I then use?

      add in some corn starch, it is magic for no spread cookie, sub out 1/4 c of the flour in recipe and replace it with corn starch, and they will not spread at all. You can not taste any difference.

      @@dcwatashi I agree with you : D Thank you for the reply and I hope that the corn starch works. I tried Preppy Kitchens Sugar cookies and found the corn starch trick. However, although most of all of his recipes are amazing, his sugar cookies just were not as sweet and chewy as I was looking for. I am still on the search for a sugar cookie that is sweet, holds its shape with very little spread but has that soft bite to it...If you ever come across this, and would not mind sharing, I would love if you shared your findings :D I have several years under my belt in Cake decorating, but, just jumped into the cookie lane...Thank you again for the smile :D BTW : in case you wanted to see Preppy Kitchen Sugar cookie video I am enclosing the link. They were really good, did NOT spread at all, and maybe you will find something in this to tweak your cookies? If not, not a thing...Just think all of us Bakers should stick together ( No Pun ) hahaha

      @@ajinpnw6221 I found that his cookies didn’t have much taste. So it could have been the type of vanilla I was using, I don’t think I was using super high-quality butter, but yes you are right they did not spread at all. I’ve been watching the seasons of the Christmas cookie challenge and I pick up quite a few tips in that show. It’s on the Food Network I don’t know if you have access to that.
      Some of the bakers substitute some of the sugar with brown sugar some of them substitute some of the white sugar with icing sugar that might give you a sweeter cookie. I might just add a little more butter to make it more like a short bread but I obviously don’t want it to crumble and I’m not mailing these I’m just handing them out to friends so I think I could get away with more of a shortbread consistency
      I also might add some lemon just to give it something. I’ve been keeping track of all the flavor combinations these bakers use in that Christmas cookie challenge show. I think that’s where you might get a little more sweetness.

    Can we colour our dough? And if so, would it be better to use liquid or gel food colouring?

      You can color the dough! Both our Color Right colors and gel colors would work :-)

      I want to make cookies for my mom-dad's 24th anniversary on 16 Nov
      so when should I bake these?
      I am thinking of making them on 13 Nov as its sunday
      and I am 14 (school-going, so I need to manage time 😅)
      and can i use candy melts instead of royal icing to decorate?
      because I never tried royal icing ( I will try royal icing some other day, when I'll have time)
