It would also help if he didn’t kill the yeast by boiling it in the beginning. 100 Fahrenheit is body temperature, he mistook it with 100 Celsius which is boiling hot water.

When?
Cooking tips from someone who has made gluten free cinnamon rolls before! : 1. Your water might have been too hot and killed some of your yeast! water needs to be between 99 and 108 degrees for most yeast to bloom properly 2. Stir in your sugar first then drizzle the yeast over the top of the water and leave undisturbed for at least two mins 3. For most gluten free mixtures the dough is going to look stickier than a normal roll, lightly flour the surface and knead the dough more until it comes together smooth 4. Knead! Knead! Knead! just like normal dough gluten free dough needs to be kneaded quite a bit and it helps to further develop a bready consistency that's lacking in some gluten free recipes. Like so he can see!!

He mistook Fahrenheit for Celsius lmao. 100 Fahrenheit is body temperature (around 37 Celsius) and he went to boiling water 100 Celsius. This and “long square” make me think maths wasn’t his topmost subject...
And it gets more air into it so it's fluffy!
Also greasing the pans is bad for rising when they are proofing. If you grease the proofing-bowl, the dough wont be able to rise as much, but if it’s bot greasy the dough will be able to «climb» the sides and become even more airy.
Pastry chef here from a vegan, gluten free bakery, you're spot on. He also over proofed both the first and second time around. Overproofing causes it to collapse back into a dense bready dough. We also use multiple different flours to get the best consistency. As for the icing, literally just water and powder sugar should be fine. Consistency as you like it.

The recipie wasn't originally gluten free and xanthum gum is pretty common to make gluten free breads more bouncy. It would probably be way worse if he hasn't added it!

Your dough became too wet and sticky because of the xanthun gum, by the way. The warm water from the yeast mixture will turn it to a gluey consistency. The best way to counteract that is to combine your other ingredients first, then knead in the xanthun gum at the very end, that way you won't need to add extra flour.

@@montanerdz No worries! My husband is celiac too so I've had many misadventures in GF baking.
The other biggest problem is that he is measuring by "cups" as opposed to by weight.
Just an example, if a recipe calls for 125 grams of flour which is about a cup. You could scoop a cup out and level it for measurement, and still wind up putting up to 150+ grams in the flour instead. It's doomed from the start.
Always measure your dry ingredients by weight. Only measure liquids by volume.

When I was helping her bake cakes for our anniversary she smacked my hand with a spoon when I tried to add a cup of flour to the cake mix instead of putting it on the scale.

Cranbaby Productions when messing with dough you have to flour the counter so it doesn’t stick to it and put flour on the rolling pin as well. But him adding an extra cup of flour to the mixture was his fault.

Some small pointers if you want to make them again:
1. They need to be closer in the pan. When you gave them room to proof, they expanded outward instead of upward.
2. Instead of pouring melted butter directly on the dough, use softened butter and go ahead and mix it with the cinnamon and sugar to form a spread. This helps them stay moist and in my opinion more flavor.

Should have put them all in one pan. They had too much room (and probably proofed a little too long) so they spread out instead of rising up. Maybe too much flour as well or potentially over baked by a few minutes if they ended up dry. Not bad for a first try though! And let's be honest, even "bad" cinnamon rolls are still pretty good.

My husband and I have been working at making gluten free pizza and we found that when working with gluten free dough the best way to keep it off your hands is to keep them oily at all times. AT ALL TIMES!!!
And to use plastic wrap or aluminum foil to keep it from sticking to your surface because too much gf flour is probably why it was cracking and tasted dry and didn't proof well because it got so heavy.
Some tips for cinnamon buns:
•when rolling the dough you want to keep it a little thicc, about 5-8mm so that when you are rolling it into a worm shape it doesn't tare
• use brown sugar in your sugar-cinnamon mix, it adds more colour and flavour
• use soft butter instead of melted butter when coating your dough, stops it from going soggy and tearing
(I am not a chef but have made cinnamon buns alot)
Also dont over-add flour. The dough is supposed to be sticky.

Also I think my mom always put the rolls in the pan touching each other. She also put the gooey glaze on the bottom of the pan with fruit and nuts and then you flip it over when they are done.

Leaving them out overnight over proofed them and they deflated. The refrigerator is your friend. Ratatouille!!!!
The buns are flat because you've over proofed them - by a lot! Happens to the best of us, but for proofing dough over night, you always (!) have to do that in the fridge. At room temp, the dough will rise too much and then just collapse. Even two hours (after initial proof) can be too long. Normally, you'd proof the dough for an hour and then, after shaping them into buns/rolls, you'd proof them for another 30 min, until puffy.
After baking, if over proofed, they will be flat, stale/dry and just not nice. Adding all the flour (and a lot of Xanthen gum) will have dried out the dough even further.
But hey, yeasted doughs are hard, and even harder when making them GF! Valid first try, next time they'll be perfect I'm sure :)
Yeast doughs are easy so as long as you measure by weight. Never by volume. Measuring by the cup is a recipe for a bad time.
For reference, a cup is 128 grams or 4.5 oz.

It makes huge bubbles form that can ruin the product and give you dry buns.

ok i don’t mean to get sappy but Julien makes me so happy. He’s one of the most genuine youtubers out there. You can really tell how much effort and time he puts into his videos, and you can tell that these cooking videos make him so happy. I love his aries energy and the fact that he can make me laugh cry even in a cooking video. I don't really know how he would have mixed up 100°C and 100°F... Usually dried yeast needs about 42°C/107°F to activate and I do think his water might have been too hot. I just don't think he messed up with conversions.

To be fair sushi is a very simple concept that needs a fine steady hand. You get to feel and see the fish/food product go from base look to sushi. Cinnamon rolls and other pastries is based on numbers and specific amounts. We aries have hard time with following directions. I don't touch pastries knowing Ima mess the whole thing up. Keep up the good work master chef Julien!
You proofed it too long because usually overnight proofing is done in the fridge to allow it to slowly rise. Yours probably rose so much at room temp that they collapsed onto themselves before you baked them. But hey baking is really hard and they still look pretty amazing. Love your show and your dogs.

Hey Julien, just a wish from a fan, my best friend is hard of hearing and loves your videos but has to wait for days until i can write down subtitles and translate them into our language. If it was possible please add subtitles to your videos (and maybe let jenna know too) or if any fan has any spare time please add some subtitles it would be great for the hard of hearing community to be able to enjoy your videos better. Okay Julien from an old baker I have got to tell you they turned out way better than you think. First of all considering you are substituting everything from traditional ingredients, not bad. Also with baking it's not like cooking you have to have exact measurements and one of the things you might have done wrong is put in too much xanthan gum then add too much flour, seriously they look wonderful I bet they taste great.
Generally true, in baking measurements are critical.
But from the look of it, the rolls lack structure. I don't think the lack of water and Xanthum gum will do that.
Of course, being non- glutinous I don't think you should expect much rising, so they should have been crowded into the pan.

Yes i would have crowded them in the pan, because xanthan gum will not give the same expansion as gluten would. And even with regular flour those buns would have been too far apart and therefore pretty flat after proofing. A bit rounder maybe, but not much more. So technically he did right with the recipe but overestimated the pan space. And agree to a certain extent about the need for exact recipe amounts. While the flour to liquid ratio has only little wiggle room, i always tweak with the amounts of sugar and fat without big mishaps. But with regular flour at least you quickly see and feel what a dough should be like and when its too wet or too dry, even when you dont measure.
If you make that exact same frosting recipe but use vegan eggnog as your liquid, (oh boy!) it makes them very festive. They’re like Christmas cinnamon rolls!
